Broccoli Salad

This Fresh Broccoli Salad is always a hit. 



2 heads of Broccoli

1/4 cup Pine Nuts

1/4 cup Raisins

1/4 cup of Red Onion

1/4 cup Red Pepper

5 Tbsp Mayonnaise

1/2 tsp Salt


1. Preheat oven to 300 F.

2.Toast Pine Nuts for 5- 10 minutes, or until browned.

3. Cut Broccoli into bite size pieces. Wash Thoroughly. Add to a large bowl.

4. Dice Red Pepper and Red Onion into small pieces. Add to bowl.

5. Add the Pine Nuts and Raisins.

6. Add the Mayonnaise and salt and mix thoroughly.

Note: Some people like to make a dressing with Mayonnaise by adding 1 Tbsp of Vinegar and 1 Tbsp white sugar. Then mix it before adding to the salad. You can also just use a coleslaw dressing. I like my dressing to be thicker so I just leave the Mayonnaise plain.
