Peach Pecan Yogurt Cookies


These Gluten Free Peach Pecan Yogurt Cookies are soft and chewy. They taste like a muffin but eat like a cookie.


1/2 Cup Sugar

3/4 Cup of Plain Yogurt

1 Egg

1 Tsp Vanilla

1 1/2 Cups Rice flour

1/2 Cup Corn Starch

1 Tsp Baking Powder

1 Cup Peaches

1/2 Cup Pecans

1 tsp Cinnamon


1. Pre heat oven to 375 F

2 . In a large mixing bowl, mix sugar and yogurt.

3. Add egg and vanilla. Mix well.

4. Stir in flour, starch and baking powder. Mix until a stiff batter forms.

5. Slice up peaches then stir into batter with pecans and cinnamon.

6. Using a spoon make 1 inch balls and place onto 2 lightly greased or lined cookie sheets.

7. Bake for 10 minutes.

Note: I turned my oven to broil for the last minute just to brown them a little more.
