Gluten Free Rhubarb Coffee Cake

It’s Rhubarb Season! My Garden is exploding with Fresh Bright Red Rhubarb right now. I needed to use some of it up, so I decided to make this Gluten Free Rhubarb Coffee Cake. It has an incredible Crumbly Brown Sugar and Cinnamon Streusel Topping and makes a perfect Afternoon Snack or Dessert with Coffee or Tea.


2 Cups Chopped Rhubarb

1 Cup Brown Sugar

1/3 Cup Vegetable Oil

1 Egg

1 Tsp Vanilla

1 1/2 Cups Rice Flour

1/4 Cup Corn starch

1 Tsp Baking Soda

    For The Topping 

1/3 Cup Brown Sugar

3 Tbsp Rice Flour

1 Tbsp Butter

1/2 Tsp Cinnamon


1. Pre heat oven to 350 F.

2. Mix the chopped rhubarb with brown sugar and vegetable oil. Then add the egg and vanilla, mix well. Stir in the rice flour, corn starch and baking soda. Mix until well combined. Pour the batter into a greased cake or loaf pan.

3. Topping  – Mix the brown sugar with rice flour, butter and  cinnamon. Sprinkle the topping over the batter.

4. Bake for 40 – 45 minutes.
