3/4 Cup Mint Chocolate Chips

Directions

1. Pre heat oven to 350 F.

    1. Lol, Thanks 🙂 You could make them with regular Chocolate Chips instead 😉

  1. Oh, yum!! It’s a shame I always manage to mess up whenever I try to make cookies from scratch, these look amazing! Pinning!

  2. These look so chewy and delicious! I haven’t baked (gluten-free) with rice flour yet. So far I have only tried 3 or 4 different gluten-free baking flour mixes, coconut flour, and almond flour. As soon as I pick up some rice flour (I have heard that the Asian grocery is a good source for less costly rice flour) we will give these cookies a try! Thanks for sharing!

    1. Thank you 🙂 I use Rice flour for most of my recipes. It’s the most affordable but still tastes good, plus it doesn’t upset my tummy like some of the other flours do. I do buy it at an Asian Grocery Store. I’ve found it there for 80 cents a bag. I have found the same brand at a few of the bigger chain grocery stores in the ethnic section as well.

  3. Yum lots of my favourite flavours in this cookie! Interesting – corn starch – why did you decide to use corn starch instead of Xanthan gum?

    1. I try to keep it simple. Most people have corn starch or can at least find corn starch and it’s more affordable but still works.

  4. So, if I’m allergic to corn can I replace the cornstarch in this recipe with xantham gum or “pixie dust” and have them turn out? (Not an equal quantity replacement, I’m sure. 🙂 )
