Pineapple Carrot Muffins

Serves: 12 muffins
- 2 Eggs
- 1 Cup Sugar
- 1 Cup Grated Carrot
- 1 Cup Canned Pineapple And Juice
- 1 Tsp Vanilla
- 1 Cup Rice Flour
- ½ Cup Tapioca Starch
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- 1 Tsp Cinnamon
- Pre heat oven to 350 F
- In a large mixing bowl, mix eggs and sugar.
- Stir in, carrots, pineapple and vanilla.
- Add rice flour, tapioca starch, baking powder, baking soda and cinnamon, Mix until well combined.
- Spoon into a greased or paper lined muffin tin.
- Bake for 20 minutes.
