  • 2 Cups Spring Mix (or Lettuce)
  • 1 Cup Cooked Shredded Chicken
  • ¼ Cup Franks Red Hot Sauce
  • 2 Tbsp Melted Butter
  • 1 Avocado
  • 2 Limes or ¼ Cup Lime Juice
  • 2 Tbsp Water
  • 1 Tbsp Olive Oil
  • ½ Tsp Salt
  1. Preheat oven to 400 F. In a small bowl mix the hot sauce and butter together. Pour over the shredded chicken. Then mix until the chicken is well coated. Place the chicken into a baking dish and bake for 20 minutes, stirring half way.
  2. In a blender or food processor, blend the avocado, lime juice, water, olive oil and salt until smooth.
  3. Place the washed spring mix onto the plates, then add the hot buffalo chicken on top. Serve with the avocado lime dressing and a squeeze of fresh lime juice.
