This Cheesy Gluten Free & Keto Chicken Quesadilla Recipe can be Made in Under 20 Minutes!!! It’s Incredibly Easy to Make and Tastes Just Like a Traditional Mexican Style Quesadilla. How do you Make a Keto Chicken Quesadilla?

To make this Tasty Cheese Shelled Keto Chicken Quesadilla:

Step 1: Preheat your oven to 400 F. Then, cover a pizza pan with Parchment Paper (NOT wax paper). Mix the Cheeses together, then evenly spread them over the parchment paper (in a circle shape).

Step 2: Bake the cheese shell for 5 minutes. Pour off any extra oil as soon as it comes out of the oven.

Step 3: Place the chicken over half of the cheese shell.  Add the sliced peppers, diced tomato and the chopped green onion. Fold the Cheese shell in half over the chicken and veggies. Press it firmly.

Step 4: Bake for another 4- 5 minutes.

Serve with sour cream, salsa and guacamole. Garnish with chopped fresh basil, parsley or cilantro.

What else can I add to this Keto Quesadilla?

– I used plain chicken but you could spice yours up with a little taco spice or buffalo sauce.

– Try switching out the chicken for shredded pork, shredded or ground beef or grilled shrimp.

– You can also use a wide range of vegetables, like avocado, grilled zucchini, onion or mushrooms.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When in ketosis, your body switches to burning fat for its primary fuel source.

On Keto, you’re supposed to get at least 70 percent of your calories from Fat, 15 to 25 percent from Protein, and 10 percent from Carbohydrates. You should avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

Keto Quesadilla Recipe Notes:

  • To reheat, preheat oven to 400 F. Bake for 6-8 minutes (if cold, a little less if room temp).
  • I let cheese shell cool for a minute then flipped it over before putting the filling onto it. This step isn’t necessary but I found that it made the quesadilla look a little prettier.
  • Use Parchment Paper (NOT waxed paper)
  • This recipe makes 1 Keto Chicken Quesadilla | 1 Serving = 1/2 of a Quesadilla

Ingredients

  • 1 1/2 Cups Mozzarella Cheese
  • 1 1/2 Cups Cheddar Cheese
  • 1 Cup Cooked Chicken
  • 1/4 Cup Bell Pepper
  • 1/4 Cup Diced Tomato
  • 1/8 Cup Green Onion

Instructions

    I made this for my husband. I didn’t have a pizza pan so I used my pizza stone. I need to invest in a regular pizza pan because it spread out to far. It was still very yummy. Thank you for sharing your recipe.

    So for one quesadilla your eating 1,198 calories? wow that would take me over my calorie amount for the whole day! Looks good though.

        Do you mean to say one quesadilla is 599 calories? Because what you are posting says its 1198 calories if you eat both servings? Also there’s no way the chicken is 105 grams of protein, which is also what you’re suggesting.

          Hi Jayson, Half of a Quesadilla is 599 calories. Yes it’s 1198 calories if you eat both servings. The nutritional information lists 105 G protein in the entire dish not just the chicken. I think you may have forgotten that cheese has a ton of protein as well.

    How do you get the cheese to look “holey” like that? Mine came out a big gooey cheese mess. Don’t get me wrong – it was delicious – but not “dry” looking like your picture. Even after I let it set out a bit at the end, it did harden up but still looked like a blob. Should I cook it longer?
    It was SO yummy though.

      Hi Yvonne, yes I would say cooking it a bit longer and also spreading the cheese a little thinner if possible should help get it a bit crispier.

    I just finished making this and its delicious but i think i definitely put way too much cheese because it didn’t get crispy at all it was just a big goopy mess. . . still tasted good but next time I’ll try less cheese. I used a mixture of cheddar and low moisture mozzerlla.

    I don’t have a pizza pan…Would a pie plate work?? & would I need to reduce the amount of cheese?

      Hi Jodey, a pie plate would work if you reduce the amount of cheese by about half but you definitely still need to use parchment paper. A cookie sheet would also work. Hope that helps.

    Okay, trying to understand the serving size…for what you have in the picture where it is cut into 4 little cute parts of the quesadilla that was baked in the oven….are the 4 cut quesadilla parts considered 1 serving or 2 servings? Or is 1 serving only 2 of those?

      Hi Kim, 1 Quesadilla makes 2 servings. Cut into 4 parts would be considered 2 servings or 2 slices per serving.

      Hi Tyler, I used a roasted chicken from the grocery store. I would either bbq or bake it in the oven if I had raw chicken breast.

    Just wanted to note, I used tin foil as I was out of parchment paper. Risky, but if you just lightly coat the tin foil in cooking spray then really compact the cheese..it peals off fairly easily. Just dab the excess oil, let cool for a minute or two and definitely bake for a few minutes longer.

    Also, probably best to determine your own nutritional facts on your own based on the brands you use. Total calories for half of my quesadilla came to 781 calories.

    But needless to say, mine turned out exactly as pictured and were absolutely delicious!

    Wow it’s so delicious. I used Tex mex shredded cheese and shredded mozzarella and it was so tasty. I had jerk chicken cubed from another meal and used that too.

    Perfect! This came out beautifully. I made sure not to crowd or overdo the cheese. That way, when it spread out, it was very lacy and stayed completely together. I used some chicken and hot salsa. Will use this many times over. Thank you!
