Keto Sausage Sauerkraut Balls

These Keto Sausage Sauerkraut Balls are really easy to make and can be whipped up in 1/2 hour. They make a great grab and go breakfast or snack and can ever be made as an appetizer. The family friendly little sausage balls are loaded with protein and are packed with flavour!

How do You Make Keto Sausage Sauerkraut Balls?

To make these Keto Sausage Sauerkraut Balls you start by preheating your oven to 375 degrees F. Line a baking pan with parchment paper. Next fry the ground sausage until cooked though. Then fry the sauerkraut until most of the moisture has evaporated. Set both aside to cool.

Use a large mixing bowl to mix all of the ingredients together. Once the sausage mixture is thoroughly mixed, shape into 24 balls. Place the sausage balls onto the parchment paper lined baking sheet. Bake for 15 – 18 minutes or until golden brown.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, that’s when you hit ketosis.

While on the Keto diet you’re supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. You’re supposed to avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

Recipe Notes:

  • I use spicy pork sausage for this recipe but you can use any type of ground pork sausage you prefer.
  • Sour cream can be used instead of the cream cheese.
  • Almond flour can be used in place of the coconut flour if needed.
  • Any type of shredded cheese can be used for this recipe.
  • You can skip frying the sauerkraut by using a cheese cloth or kitchen towel to squeeze out the moisture.
  • I fried the sausages and sauerkraut separately so that I could pour of the extra grease from the sausages easier. You can fry both together if you prefer to.
  • This Recipe Makes 24 Keto Sausage Sauerkraut Balls.

These Keto Pulled Pork Tacos are a Delicious Low Carb Meal that the Whole Family will Enjoy. The Easy to make Tacos are made with Tender Slow Cooked Pulled Pork with Crunchy Cheese Taco Shells. The Recipe includes Two Different ways to Flavour the Pulled Pork. Carnitas which is Mexican Slow Cooked Pulled Pork or Smothered in Low Carb BBQ Sauce and Melted Butter.

How to Make Keto Pulled Pork Tacos

For Shredded Pork Carnitas: In a cup, mix the spices with the water. Pour over the shredded pork, mix until all the pork is covered with spices. Drizzle the pork with olive oil and bake for 15 – 20 minutes or until all the liquid is evaporated and the meat is caramelized. Stir the meat a few times throughout cooking.

For BBQ Shredded Pork: In a large mixing bowl, mix the shredded pork with the bbq sauce and melted butter. Once the pork is fully costed in sauce, transfer it to greased or lined baking dish and bake 15 – 20 minutes or until the meat has caramelized.

For the Cheese Taco Shell: In a large mixing bowl, mix the cheddar and mozzarella. Divide the cheese mixture into 8 small balls. Place onto a parchment paper lined baking sheet and bake for 5-6 minutes, or until the edges are golden brown. Place a wooden spoon over 2 cups or jars the same hight. Use a spatula to hang the hot cheese over the wooden spoon handle. Leave the shells hanging over the spoon handle until hardened.

  • 3/4 Cup Cheddar shredded
  • 3/4 Cup Mozzerella shredded
  • 1 lb Pork Tenderloin
  • For Shredded Pork Carnitas:

  • 1 Tsp Cumin
  • 1/2 Tsp Onion Powder
  • 3/4 Tsp Garlic Power
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 1/2 Cup Water
  • 2 Tbsp Olive Oil
  • or For BBQ Shredded Pork:
  • 1/2 Cup BBQ Sauce low carb
  • 1/4 Cup Melted Butter

Instructions

HOW TO MAKE BACON WRAPPED CHICKEN SKEWERS

To make these Bacon Wrapped Chicken Skewers, you start by preheating your oven to 400 F. Line a lipped baking pan with tin foil, then place a wire rack on top. Slice the chicken into long 1 inch wide strips. Skewer the chicken, then wrap each one with one piece of bacon. Brush the skewers with the bbq sauce then place them onto the wire rack. Bake for 30 – 35 minutes or until the chicken is cooked through.

Recipe Notes:

  • If using wooden skewers, you’ll need to soak the skewers in water before using.
  • When wrapping the chicken skewers with bacon… it’s best to not over lap the bacon (as much as possible). This will help the bacon cook evenly and get it nice and crispy.
  • If you can’t find low carb bbq sauce, you can either make a homemade one or just skip it altogether.
  • This recipe can also be made on a bbq on the lowest setting, instead of using the oven.
  • The bacon wrapped chicken can also be made without the skewer. Just place the bacon wrapped chicken onto the wire rack the same way.
  • You can skip the wire rack if needed but you’ll need to turn the skewers more often and you’ll also want to pour off the excess grease a few times.
  • This Recipe Makes 10 Bacon Wrapped Chicken Skewers.

How to Make Keto Cheesy Bacon Garlic Bread

To Make this Keto Cheesy Bacon Garlic Bread you start by melting  the shredded mozzarella and the cream cheese in a frying pan over medium heat. (This step can also be done in a microwave) Remove from the heat, then stir the melted cheeses until they’re well combined. Using a mixing bowl, mix the eggs in until fully combined. Then add the almond flour, coconut flour, baking powder, xanthan gum, minced garlic and oregano to the cheese mixture. Mix until well combined.

Between 2 pieces of parchment paper, press the dough into a rectangle. Remove the top piece of parchment paper and bake 15 minutes. Mix the minced garlic with the butter and garlic powder. Then spread the garlic butter over the partially cooked bread. Cover with the toppings and bake for another 5 minutes. Cut the keto bacon garlic bread into 14 pieces.

Recipe Notes:

  • To make a nice flat edge… I folded the edges of the parchment paper and dough, then pressed it back down with the edge still folded.
  • Melting the shredded mozzarella and the cream cheese in a microwave depends on how powerful you microwave is. My rule of thumb is to melt the cheese in increments of 30 seconds and stir. I did 2 30 seconds and an extra 15.
  • When making the fathead dough it feels like it’s going to be too wet at first but if you keep mixing it, it thickens. It’s important for it to be mix very well.
  • I roll out my rectangle to be approximately 12″ x 6″.
  • Use Parchment Paper (NOT waxed paper)

Ingredients

  • For The Fathead Dough:
  • 2 Cups Mozzarella Cheese Shredded
  • 3 Tbsp Cream Cheese
  • 2 Eggs
  • 1/2 Cup Almond Flour
  • 1/4 Cup Coconut Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Xanthan Gum optional
  • 1 Tsp Oregano
  • 2 Cloves Garlic minced
  • For the Topping:
  • 6 slices Bacon
  • 1/4 Cup Mozzarella Cheese
  • 1/4 Cup Cheddar Cheese
  • 1 Clove Garlic minced
  • 1/2 tsp Garlic Powder
  • 1 Tsp Butter

Instructions

  • Pre Heat oven to 400 F. Melt the shredded mozzarella and the cream cheese in a frying pan over medium heat. (This step can also be done in a microwave) Remove from the heat, then stir the melted cheeses until they’re very well combined. Using a mixing bowl, mix the eggs in until fully combined. Then add the almond flour, coconut flour, baking powder, xanthan gum, minced garlic and oregano to the cheese mixture. Mix until well combined.
  • Between 2 pieces of parchment paper, press the dough into a rectangle. Remove the top piece of parchment paper and bake 15 minutes. Mix the minced garlic with the butter and garlic powder. Then spread the garlic butter over the partially cooked bread. Cover with the toppings and bake for another 5 minutes. Cut the keto bacon garlic bread into 14 pieces.
  • This recipe makes 14 pieces of Keto Cheesy Bacon Garlic Bread.

How To Make Keto Slow Cooker Sweet and Sour Meatballs

To make these Keto Slow Cooker Sweet and Sour Meatballs, you start by preheating your oven to 400 F. Then in a large bowl, mix the ground beef/pork, the egg, garlic powder, salt and pepper. Line a rimmed baking pan or cookie sheet with tin foil. Then roll out, small one inch meatballs. Place the meatballs in the pan, then bake for 12-13 minutes. Pour off any grease, then turn your oven to broil. Bake for another 10 – 12 minutes, turning the meatballs a few times if needed. Transfer the cooked meatballs to a slow cooker/ crockpot.

How To Make The Keto Sweet and Sour Sauce:

To make the Keto Sweet and Sour Sauce, you add the sugar free ketchup, gluten free soya sauce, vinegar, lemon juice and swerve brown sugar to a medium sized sauce pan. Brin to a boil, stirring throughout. Pour the sweet and sour sauce over the meatballs. Cook on low for 4 hours or on high for 2 hours.

  • If cooking the meatballs in the slow cooker for more than 4 hours, you’ll need to add a bit of water.
  • The sweet and sour meatballs can be served without cooking them in a slow cooker or crock pot. Just pour the prepared sauce over the cooked meatballs, if preferred.
  • If you like breadcrumbs in your meatballs, try using crushed up pork rinds instead. You won’t need to add as much salt though because they’re usually salted.
  • If you don’t have tin foil, just use an unlined baking pan.
  • The keto meatballs can ba made with just ground beef or pork. They will work fine without mixing but I find the texture and taste to be better if you mix them.
  • The recipe makes 9 servings of 6 meatballs each. If feeding a larger crowd you’ll need to double or triple the recipe.

How Do You Make Keto Mummy Hot Dogs?

To make these delicious Halloween Keto Mummy Hot Dogs:

Step 1: Start by, preheating your to oven to 400 F. Melt the shredded mozzarella and the cream cheese in a frying pan over medium heat. (This step can also be done in a microwave) Remove from the heat, then stir the melted cheeses until they’re well combined. Using a mixing bowl, add the eggs and mix until smooth. Stir in the almond flour, coconut flour, baking powder and  xanthan gum. Stir until well combined.

Step 2: Between 2 pieces of parchment paper, press the dough into a rectangle. Use your hands or a rolling pin to press the dough into a flat rectangle (approx. 12″ x 8 “).  To make a nice flat edge, fold back each of the edges of the parchment paper, then press down with the edge still folded.

Step 3: Use a sharp knife to cut the dough into 12 thin strips. Cover a baking sheet with parchment paper. Then wrap each of the hot dogs with the 2 of the dough strips. If the dough rips just pinch it back together. Place the keto mummy dogs onto the parchment paper lined baking sheet and bake for 13 – 15 minutes. Use a small amount of mayonnaise to hold on the edible decorative eyes or peppercorn’s.

– I got the edible eyes from Michaels which is a Craft/ Baking Supply Store. Most Craft / Baking Supply Stores sell them. You can also buy them on Amazon.

– The fathead dough can be somewhat delicate to work with. The dough sticks to itself very well, so you can press the dough together with small sections if needed. You can also press the dough back into a ball and start over, pressing it down between the two pieces of parchment paper.

To make these delicious Keto Chicken Bacon Ranch Cheese Wraps start by preheating your oven to 375 F. Cover a baking pan with parchment paper (Not Waxed paper). Spread the 6 slices of cheese out onto the pan with the edges touching in 2 rows of 3. Bake the cheese for 4 – 6 minutes or until the edges start to turn brown.

Let the Cheese tortilla cool for a few minutes, then spread the guacamole on one edge of the cheese. Spread the spring mix or lettuce over the guac, then cover with the cooked chicken and bacon. Tightly roll the wrap from the edge with the filling on it, using the ranch dressing to help seal the wrap tightly.

  • Preheat oven to 375 F. Cover a baking pan with parchment paper (Not Waxed paper). Spread the 6 slices of cheese out onto the pan with the edges touching in 3 rows of 2. Bake the cheese for 4 - 6 minutes or until the edges start to turn brown.
  • Let the Cheese tortilla cool for a few minutes, then spread the guacamole on one edge of the cheese wrap. Spread the lettuce over the guacamole, then cover with the cooked chicken and bacon. Cover with the cheddar slices, then spread the ranch dressing on the opposite edge of the wrap. Tightly roll the wrap from the edge with the filling on it, using the ranch dressing to help seal the wrap tightly.

This Delicious Creamy Keto Mushroom Soup Recipe can be made Quickly on the Stove Top or can be Slowly Simmered in a Slow Cooker. How Do You Make Creamy Keto Mushroom Soup?

To make this delicious Keto Cream of Mushroom Soup Recipe:

Step 1: Start by dicing up, then frying the bacon in a large pot. Cook it for 2 – 3 minutes or until cooked through.

Step 2: Remove the bacon from the pot but leave the grease behind. Add 2 tbsp of butter and the minced garlic to the pot. Let cook for 1 minute. Add the sliced mushrooms and let fry until browned and tender, approximately 10 minutes.

Step 3: Add the beef broth to the pot along with the cooked bacon. Let simmer for 10 minutes. Scoop out 1 cup of the mushrooms and set them aside.

Step 4: Using a blender or immersion blender, blend the  beef broth and mushrooms until smooth (approx. 1 min). Return the soup to the pot, then add back in the remaining mushrooms.

Step 5: Bring back to a boil, then add the butter and heavy cream. Bring back to a boil again, then add in the shredded mozzarella cheese. Season with salt and pepper and the garlic powder. Stir until thoroughly combined. Let simmer on low for 20 – 30 minutes.

Recipe Tips:

– If using store bought beef broth, you may not need to add any extra salt. Most Beef Broths are salted.

– The beef broth can be switched out for chicken, vegetable or mushroom broth and you can use a variety of different mushrooms. Some of my favourites are, portobello mushrooms, dry porcini mushrooms and shitake mushrooms.

– To make this soup in a slow cooker (crockpot) do steps 1 and 2 but put the soup into you slow cooker instead of putting it back into the pot. Add the butter and heavy cream and the shredded mozzarella cheese. Season with salt and pepper and the garlic powder. Stir until thoroughly combined. Let simmer on low for 4 – 6 hours.

This Family Friendly Gluten Free & Keto Cheesy Spinach Ravioli Recipe is Really Quick to Throw Together. The Ravioli tastes so much like Traditional Ravioli that you’d Never know it’s made Entirely of Cheese! That’s Right the Recipe uses Mozzarella Cheese Slices instead of a Pasta Shell.

How Do You make Keto Ravioli?

To make these delicious Keto Cheese Spinach Ravioli… start by preheating your oven to 325 F. In a small frying pan, brown the garlic in the butter for 1 minute. Then add the spinach to the pan. Cook for 1 – 2 minutes or until the spinach is tender. Chop the cooked spinach into small bits. In a mixing bowl add the ricotta cheese, chop up and add the basil as well as the spinach and garlic. Add in the salt and stir until well combined.  Using a tsp, make 16 small balls with the ricotta mixture.

Cut the cheese slices in half, then spread out the mozzarella slices onto 2 parchment paper (Not Wax Paper) lined baking sheets. Bake the cheese slices, until fully melted, approx. 4-5 mins. Remove from the oven and let cool slightly before adding one ball of ricotta to each slice.

Next, fold the rectangles in half, making squares. Firmly press the sides closed. Return to oven for 3 – 4 minutes. Broil for 2 minutes, push side in with a fork into squares. Broil another 2 minutes.

RECIPE TIPS:

  • Using pre sliced Mozzarella Deli Slices makes this recipe a breeze.
  • I turned my oven to broil for the last 2 minutes of baking, just to brown the tops a bit more. Watch very closely if you do this step.
  • Small square piles of grated mozzarella cheese will work instead of the slices if needed.
  • To make the the ravioli extra pretty, you can quickly trim the edges with a a knife after baking them. This step isn’t necessary but it does give the ravioli a perfect square shape.

What is a Chaffle?

A Chaffle is a Low Carb Waffle made with only 2 ingredients… Eggs and Cheese!  They can be made with any Type of Grated Cheese and can be made in many different Flavours. My Family Loves Sweet Cinnamon Sugar Chaffles, which uses Mozzarella and a bit of Cinnamon and Stevia. We also quite often make Pizza and Tuna Melt Chaffles too.

How Do You Make a Chaffle?

To Make a Chaffle you start by preheating  your waffle maker. Then in a small bowl, beat the eggs. Add the shredded cheese and mix until well combined. Pour the chaffle batter into 2 ungreased  waffle maker spots. Cook for approx. 6 – 8 minutes. or until golden brown.

The best part about the Chaffle is definitely how versatile they are. There’s so many things you can do with them. We like to use the batter to make carnivore pancakes, which my husband Loves! I often use them to make Chaffle Sandwiches. We’re always surprised at how bread like they are. Listed below are a few things we’ve made with the Chaffle batter. What Kind of Chaffles have you made? Chaffle Sandwiches – From Steak Sammies to BLT’s…There’s no limit to the different types of sandwiches that can be made with these delicious chaffles!

Chaffle Tuna Melts – Use the chaffle as a base for the tuna melt. Mix the tuna with mayo, spread the tuna over the chaffle then cover with cheese. Melt in the oven until cheese is melted.

Cinnamon Sugar – Use mozzarella for sweet chaffles and add in a 1/2 tsp of cinnamon and a 1/2 a tsp of sweetener to the batter before cooking.

Pizza Chaffles – Mix in 1 Tbsp low carb tomato sauce and 2 tbsp of diced pepperoni or you can use the chaffle as a base and put your pizza toppings on top.

Peanut Butter Chaffles – Use mozzarella cheese and add sweetener and 2 tbsp of peanut butter.

Chocolate Chaffles – Use mozzarella cheese and add 2 tbsp of cocoa powder, 2 tbsp of almond flour and a little sweetener.

– This recipe can be made with any type of grated cheese. Typically mozzarella is used for the sweeter ones and cheddar is used when a little more flavour is desired.
