Chicken Zoodle Soup

This Simple Low Carb, Chicken Zoodle Soup is made with thinly sliced Zucchini instead of traditional Noodles.  You won’t want to make Chicken Soup the same way again. I usually add whatever Vegetables I have in my Fridge or Garden but Celery, Peppers, Peas, Corn, Mushrooms or Squash would also go well in this soup.

Whenever we have a Roasted Chicken, I save the bones to make soup stock with. If I don’t need the stock that week I’ll freeze it in small amounts so I can use it for Stir fry, Soups or just adding a little Flavour to a recipe. Making my own Stock means that I need to add a bit of Salt to get the flavour right but if you’re using a store bought Chicken Stock you may not need to add any at all.

If you have a Veggie Spiralizer to make the Zucchini noodles with, by all means use it. I don’t have one so I like to slice mine really thin with a knife.

Ingredients

1 Tbsp Butter or Cooking Oil

1 Onion

2 Potatoes

3 Carrots

4 Cloves of Garlic

1 Medium Zucchini

1 Cup Cooked Chicken

5-6  Cups Chicken Stock

1 Tbsp Salt (if using store bought chicken stock you may not need to add any salt)

1 Tsp pepper

Directions

1.In a large pot over medium heat, add the oil or butter. Then dice, then add the onion, carrot, potato and garlic.

2. Slice the Zucchini into very thin slices. Add it to the pot along with the cooked chicken.

3. Add the chicken stock, then salt and pepper.

4. Let simmer over low heat for 1 hour.

Thai Coconut Curry Soup with Chicken

Thai Coconut Curry Soup with Chicken

This Gluten Free Thai Coconut Curry Soup with Chicken has just the right amount of heat. It’s so creamy and is loaded with Incredible Flavor. I could eat this soup every day. It can be made with Shrimp or Beef instead of Chicken, or skip the Chicken and use some Veggie Broth and Sweet Potato for a delicious Vegetarian version.

Ingredients 

1 Tbsp Olive Oil

1 Tsp Minced Fresh Ginger

4 Chicken Breasts

2-3 Tbsp Red Thai Curry Paste

2 Cans Coconut Milk

3-4 Cups Chicken Broth

3 Limes

8 – 10 White Mushrooms

1 Red Pepper

1 Small Zucchini

1-2 Tbsp Chopped Fresh Basil

1 Stalk Lemon Grass (optional)

1 Tbsp Fish Sauce (optional)

3 or 4 Lime Leaves (optional)

Directions 

1. Slice the chicken into bite sized pieces. Then fry in oil, in a large pot with the fresh ginger.

2. Once the chicken is fully cooked, add the curry paste, basil and optional, fish sauce, lemon grass and lime leaves.

3. Add 1 can of coconut milk and stir until well combined.

4. Add the chicken broth.

5. Slice, then add the mushrooms, zucchini and red pepper.

6. Squeeze in the juice from 2 of the limes.

7. Add the second can of coconut milk, then let simmer for 1/2 hour to 1 hour.

8. Serve with a slice of lime and an optional side of rice or rice vermicelli noodles.

Note:

I use homemade chicken broth, which tends to be thicker than store bought chicken broth. If you’re using store bought, you may want to add less depending on how thick you like your soup. If you use homemade chicken broth you may need to add a little water depending on how thick your broth is.

6 Tips For Changing Your Diet

Changing your diet isn’t an easy thing to do. Here’s a list of 6 things you can do, to help keep you on track.

1. Stock Up On Food That You Can Eat – You’re more likely to eat the food your avoiding if you don’t have many options around you. Keeping your fridge full of delicious food you can eat, will help keep you satisfied while you get used to your new diet.

2. Make A Shopping List – Changing your diet involves more planning, at least at first. You have to sit down and think about what you should make. Plan out a shopping list so that you have some snacks to eat. Otherwise you’ll be stuck staring aimlessly at the fridge, wondering what to make.

3. Bring Food With You – Bring food with you, when you know there won’t be many choices for you to eat. It can be hard going to parties where they are serving the food your avoiding. If you have some sort of snack in your bag or car, it can really help to keep you satisfied.

4. Don’t Skip Meals –  When you’re famished you’re more likely to eat the food your avoiding. Keeping yourself full throughout the day, will help to keep you from making bad choices at night.

5. Drink Lots Of Water – Drinking a lot of water will help to keep your stomach full, which will make you think about food less.

6. Keep Busy – Keeping yourself busy will help keep your mind off food. So take up a new hobby or go out for a long walk. Whatever it takes to keep yourself occupied.

Cravings do eventually go away. The trick is to do what you can in the meantime, to keep yourself happy. Try to stay positive and know that feeling better is worth it.
