Sausage Stuffed Mushrooms

These Delicious Sausage Stuffed Mushrooms are white button mushroom caps stuffed with Italian sausage, sauerkraut and three kinds of cheese. These mushrooms are naturally keto, gluten free, low carb and only require a handful of ingredients. They can also be prepped ahead of time, making them the perfect party appetizer!

What kind of mushrooms are best for stuffed mushrooms?

I like to use regular white button mushrooms for my stuffed mushrooms because they have a mild flavor that pairs perfectly with the savory sausage filling. You can also use large portobello mushrooms if you’re looking for an entree sized stuffed mushroom.

What cheese is best for sausage stuffed mushrooms?

I use three types of cheese in these mushrooms: cream cheese, parmesan cheese and mozzarella cheese. The cream cheese acts as a binder, the parmesan adds flavor and shredded Mozzarella’s  mild creaminess complements the stronger flavors of the sausage. Other great cheese options are fontina, monterey jack or cheddar cheese.

How long do you bake stuffed mushrooms?

Sausage stuffed mushrooms need to bake for about 20 minutes. The mushrooms are done when the tops are crispy and browned and the mushroom caps are tender all the way through.

Can Stuffed Mushrooms be made in an Air fryer?

Yes, it would work well. Fry them at 400°F for 7-8 minutes or so. You would need to do this in batches so the mushrooms will fit in a single layer.

How do you clean mushrooms?

Mushrooms are very absorbent, so if you wash them or submerge them in water, they can become rubbery when you cook them. Instead, use a damp paper towel and wipe them off.

Can you freeze Sausage Stuffed Mushrooms?

Stuffed mushrooms can be frozen! Add assembled but unbaked stuffed mushrooms to a wax/parchment paper lined baking sheet and place in the freezer for about 2 hours, or until frozen solid. Transfer to a freezer-safe container, label with the date, and freeze for up to 3 months.

How do you make sausage stuffed mushrooms?

Start by preheating your oven to 350°F. Wipe mushrooms clean with lightly damp paper towels (I used 24 medium mushrooms). Remove stems and scoop out the brown gills from inside the mushrooms, being careful not to break through the shell. Place the mushroom caps into a mixing bowl and cover with olive oil. Gently stir until the mushrooms are coated in the oil. Arrange mushroom caps with the opening facing up on a rimmed baking sheet lined with parchment paper.

In a large skillet over medium-high heat, cook sausage until browned, breaking it apart with your spatula into crumbles. Add 2 minced garlic cloves and 1/2 cup sauerkraut. Let cook for 1 or 2 minutes then, remove from heat. Stir in salt and pepper and 1/2 cup cream cheese along with 1/2 cup of mozzarella cheese. Divide the sausage mixture between the mushroom caps then cover each of them with the remaining mozzarella cheese. Sprinkle them with parmesan cheese and bake uncovered in the center of the oven for 18 – 20 minutes.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, that’s when you hit ketosis.

While on the Keto diet you’re supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. You’re supposed to avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

This recipe for Keto Sausage Stuffed Mushrooms requires minimal effort and only uses simple and easy to find ingredients like white button mushrooms, sausage and cream cheese. The stuffed mushrooms are also naturally high in protein and are paleo and low carb as well as gluten free.

Recipe Notes:

  • The stuffed mushrooms can be made in advance and reheated.
  • To Store: Refrigerate mushrooms in an airtight storage container for up to 3 days.
  • To Reheat: The best way to reheat leftover stuffed mushrooms is in the oven. Place the mushrooms in a baking dish in the oven at 350 degrees F. In a pinch, you can rewarm in the microwave.
  • To Freeze: Add assembled but unbaked stuffed mushrooms to a wax/parchment paper lined baking sheet and place in the freezer for about 2 hours, or until frozen solid. Transfer to a freezer-safe container, label with the date, and freeze for up to 3 months.
  • You can use any type of sausage that you like. I typically use a mild Italian sausage, but hot works just as well. You can buy bulk sausage, or simply remove the casings from the sausage before you cook it.
  • The stuffed mushrooms can be made in an oven proof skillet instead of a baking pan.
  • The left over mushroom stems can be diced up and added to the sausage mixture or can be saved for future stir fry, soups, omelettes or casseroles.
  • Garnish the Stuffed mushrooms with fresh parsley, thyme or chopped green onion.
  • The Sauerkraut can be swapped out with diced white onion if preferred. You can also skip it altogether.

These Keto Sausage Sauerkraut Balls are really easy to make and can be whipped up in 1/2 hour. They make a great grab and go breakfast or snack and can ever be made as an appetizer. The family friendly little sausage balls are loaded with protein and are packed with flavour!

How do You Make Keto Sausage Sauerkraut Balls?

To make these Keto Sausage Sauerkraut Balls you start by preheating your oven to 375 degrees F. Line a baking pan with parchment paper. Next fry the ground sausage until cooked though. Then fry the sauerkraut until most of the moisture has evaporated. Set both aside to cool.

Use a large mixing bowl to mix all of the ingredients together. Once the sausage mixture is thoroughly mixed, shape into 24 balls. Place the sausage balls onto the parchment paper lined baking sheet. Bake for 15 – 18 minutes or until golden brown.

  • I use spicy pork sausage for this recipe but you can use any type of ground pork sausage you prefer.
  • Sour cream can be used instead of the cream cheese.
  • Almond flour can be used in place of the coconut flour if needed.
  • Any type of shredded cheese can be used for this recipe.
  • You can skip frying the sauerkraut by using a cheese cloth or kitchen towel to squeeze out the moisture.
  • I fried the sausages and sauerkraut separately so that I could pour of the extra grease from the sausages easier. You can fry both together if you prefer to.

This Delicious Keto Sausage and Radish Breakfast Hash is Loaded with Chorizo Sausage, Oven Roasted Radishes, Caramelized Mushrooms and is Topped with perfectly runny Eggs. It’s an Easy to Make and Inexpensive Low Carb Dish that can be Served for Breakfast, Brunch or Dinner! Breakfast Hash is Naturally Gluten, Sugar and Dairy Free and is Low Carb and Keto.

What is Breakfast Hash?

A breakfast hash is Hash is a culinary dish consisting of chopped up meat and potatoes, then fried in a cast iron skillet. The name is derived from French: hacher, meaning “to chop”. It originated as a way to use up leftovers. By the 1860s in the United States, the reputation of hash as “humble fare” became associated with cheap restaurants, which were known as “hash house” or “hashery”.

How to Make Keto Sausage and Radish Breakfast Hash

To make this easy recipe you start by preheating your oven to 425 F. Wash the radishes, then use a knife to slice them into quarters. Toss the radishes in 1 tbsp of the olive oil, salt and garlic powder. Make sure they’re well coated, then transfer them onto a baking sheet. Place in the oven and bake for 20 – 25 minutes (depending on size of radishes).

While the radishes are in the oven, fry up the ground sausage until fully cooked. Remove from the pan and set aside. Fry the sliced mushrooms in 1 tbsp of the olive oil. Once fully browned remove from the heat.  In a large skillet, drizzle the remaining tbsp of olive oil on the bottom, then place the cooked radishes evenly over the pan. Cover the radishes with the cooked sausage and mushrooms.

For adding the eggs, there’s 2 options. For the prettier look like what I’ve done in the photos… you precook the eggs in a separate pan and add them to the hash after their cooked. Or you can give the eggs a quick whip and pour them over the hash ingredients omelette style.

How Do You Make Homemade Keto Sausage Rolls with Fathead Dough?

To make this Delicious Keto Fathead Sausage Roll Recipe, you need to start with making the fathead dough. Melt the shredded mozzarella and the cream cheese in a frying pan over medium heat. A recipe tip: I folded the edges of the parchment paper and dough, then pressed it back down with the edge still folded, to make a nice flat edge.

Once you have a nice long rectangle, spread the sausage mixture evenly along one side of it. Leave about an inch to seal the dough. Then brush the edge with beaten egg. Use the parchment paper to flip tho dough over the line of sausage. Press the dough gently together until sealed. Divide the sausage rolls into 10, 2” sections, then use a knife to cut the rolls. Place the rolls on their side (dough down) on a parchment paper lined baking pan. Poke each of the rolls with a knife, then generously brush with the remaining beaten egg. Bake for 25 -30 minutes.

WHAT IS THE KETOGENIC DIET?

This Keto Sausage Roll Recipe is really easy to make. The Sausage Rolls can be served either hot or cold and can be made with many variations. I used sausage links and removed the meat from the casings but you can buy ground sausage that’s not in the casings. You can also use ground pork or even ground chicken instead.

  • To keep the sausage rolls from getting soggy, I switched out the greasy piece of parchment paper for a fresh piece half way through baking. (I had a second pan ready to go)
  • For the last few minute of baking, I turned my oven to broil. Then turned the rolls on their sides to brown the edges a bit more. When doing this step, make sure to watch them very closely.

Ingredients

  • For The Dough:
  • 2 Cups Mozzarella Cheese Shredded
  • 3 Tbsp Cream Cheese
  • 3 Eggs divided
  • 1/2 Cup Almond Flour

Sausage and Sauerkraut Spring Rolls

These Simple but extremely Flavorful Crispy Gluten Free Sausage and Sauerkraut Spring Rolls are Oven Baked. They’re inspired by Sauerkraut Perogies, which is my favourite kind of Perogie. My mother in law makes them every year at Thanksgiving. But of course I can’t eat them because they’re made with Gluten. So to make myself feel better I make these delicious Gluten Free Sausage and Sauerkraut Spring Rolls. They’re way easier to make than a traditional perogie and I think they taste just as good. They’re made with rice paper instead of a traditional eggroll wrapper. Another delicious recipe made with rice paper is this Baked Apple Pie Rice Paper Rolls. 

Serve with Sour Cream.

Ingredients 

1 500g Pkg of Italian Sausage

2 Cups Sauerkraut

1/2 White Onion

Rice Paper

1 – 2 Tbsp Olive Oil

Directions 

1. In a large pan, fry the sausage. Remove from the casing before cooking, if you’re not using  ground sausage. Once the sausage is fully cooked, mince, then add the onion. Cook for a few minutes, then add the sauerkraut. Mix well then let simmer on low for 15 – 20 minutes.

2. Pre Heat oven to 425 F.

3. Fill a large bowl half way with water. Let the rice paper soak, a few at a time. Once the rice paper is soft enough, place onto the counter. Put 3 Tbsp (for large rice paper rolls) or 1 Tbsp (for small), of the sauerkraut mixture onto the center of the rolls. Fold in the sides first, then tightly roll up from the bottom, making a cylinder shape.

4. Place onto a parchment paper lined baking sheet. Brush each one generously with oil.  Bake for 35 – 40 minutes, turning a few times throughout.
