Pineapple Cashew Chicken Stir Fry

This Pineapple Cashew Chicken Stir Fry is a delicious and easy to make gluten free meal. It can be thrown together in a couple of minutes making this the perfect meal for a busy weeknight.  It’s sauced with a delicious gluten free Sweet Chili Sauce, Chicken Breast, Carrots, Cashews, Pineapples, Peppers and Rice Vermicelli Noodles. 

Ingredients

1 Tbsp Olive Oil

2 Chicken Breast

2 Carrots

1/2 of a Red Pepper

1/2 of a Yellow Pepper

1/2 Cup Pineapple

1/2 Cup Cashews

4-6 Tbsp of Gluten Free Sweet Chili Sauce

1/2 of a Package of Rice Vermicelli Noodles

Directions

1.  Cut chicken breast into strips and fry in olive oil.

2. Prepare the rice vermicelli noodles as directed on the package.

3. Slice carrots and peppers and add the the pan once the chicken is fully cooked.

4. Add pineapple and cashews, then add sweet chili sauce.

5. Let simmer for 5 minutes.

6. Serve over the rice noodles.

    Looks yummy! And I will need to find the gf chili sauce you mention! What brand do you use? You might try adding coconut aminos for a wonderful gf soy-free alternative. It’s fantastic!       Thanks 🙂 I use Aroy-d sweet chili sauce, it’s thickened with corn starch and xanthan gum. I will Check out your dish right now, it sounds yummy too. Thanks for commenting 🙂
