These Baked Chicken Fajita Roll Ups are a great Dairy Free and Keto Family Friendly Dinner that can be made in 30 minutes or less. The flavourful Fajita Spiced Chicken and Peppers are a delicious low carb twist of a classic Mexican Favourite.

How to Make Keto Chicken Fajita Roll Ups

To make these delicious Keto Chicken Fajita Roll Ups, start by preheating your oven to 375 degrees F. In a small bowl mix the lime juice with the olive oil, cilantro, cumin, garlic powder and salt. Slice the chicken breasts in half lengthwise, then slice each of those halves in half lengthwise as well. Use a large zip lock bag or bowl and cover the chicken strips with the lime mixture. Mix until all the strips are completely coated with the marinade.

Cut the coloured peppers into strips. Then line a baking pan with parchment paper. Next place one of each of the coloured peppers onto one side a chicken strip. Roll the strip around the peppers then fasten it in place using a tooth pick. Repeat until all the chicken is rolled up. Then place the chicken roll  ups onto the prepared pan. Bake for 18 – 20 minutes or until the chicken is fully cooked.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, that’s when you hit ketosis.

While on the Keto diet you’re supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. You’re supposed to avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

Recipe Notes:

  • 4 thin cut chicken cutlets can be used in place of the chicken breast.
  • Squeezing a little fresh lime juice on top of the chicken before serving with add a little extra flavour.
  • Garnish with fresh chopped cilantro.
  • 1 colour of bell pepper can be used instead of all 3 if needed.

Ingredients

  • 2 Chicken Breasts

Instructions

These Keto Ham and Cheese Slider Rolls are Made with Thinly Sliced Ham, rolled in Melted Swiss Cheese Slices that are sprinkled with Poppy Seeds and then are are dipped in Mustard. They make a great Keto Lunch that can be thrown together Quickly and can also be Made Ahead for a Grab and Go Snack. They’re also made with only 4 ingredients and only have 1.6 g Net Carbs per Roll.

How To Make Keto Ham and Cheese Slider Rolls

To make these tasty keto slider rolls, you start by preheating your oven to 400 F. Cover a baking pan with Parchment Paper (NOT wax paper). Place the cheese slices onto the parchment paper. Sprinkle each of the slices with the poppy seeds. Bake the cheese for 7 – 8  minutes or until the edges have started to brown.

Bake the cheese for 7 – 8  minutes or until the edges have started to brown. Let cool slightly, then place 2 slices of ham on the corner of each of the baked cheese slices. Roll them tightly and serve with a side of mustard. (You can also spread the mustard onto the ham before rolling if desired)

These Keto Pulled Pork Tacos are a Delicious Low Carb Meal that the Whole Family will Enjoy. The Easy to make Tacos are made with Tender Slow Cooked Pulled Pork with Crunchy Cheese Taco Shells. The Recipe includes Two Different ways to Flavour the Pulled Pork. Carnitas which is Mexican Slow Cooked Pulled Pork or Smothered in Low Carb BBQ Sauce and Melted Butter.

How to Make Keto Pulled Pork Tacos

For Shredded Pork Carnitas: In a cup, mix the spices with the water. Pour over the shredded pork, mix until all the pork is covered with spices. Drizzle the pork with olive oil and bake for 15 – 20 minutes or until all the liquid is evaporated and the meat is caramelized. Stir the meat a few times throughout cooking.

For BBQ Shredded Pork: In a large mixing bowl, mix the shredded pork with the bbq sauce and melted butter. Once the pork is fully costed in sauce, transfer it to greased or lined baking dish and bake 15 – 20 minutes or until the meat has caramelized.

For the Cheese Taco Shell: In a large mixing bowl, mix the cheddar and mozzarella. Divide the cheese mixture into 8 small balls. Place onto a parchment paper lined baking sheet and bake for 5-6 minutes, or until the edges are golden brown. Place a wooden spoon over 2 cups or jars the same hight. Use a spatula to hang the hot cheese over the wooden spoon handle. Leave the shells hanging over the spoon handle until hardened.

  • 3/4 Tsp Garlic Power
  • 1/2 Tsp Salt
  • 1/4 Tsp Pepper
  • 1/2 Cup Water
  • 2 Tbsp Olive Oil
  • or For BBQ Shredded Pork:
  • 1/2 Cup BBQ Sauce low carb
  • 1/4 Cup Melted Butter

Instructions

This No-Fuss Gluten Free & Keto Grilled Chicken with Feta and Tomato is the Perfect Dinner for Summer! The Marinated Tomatoes and Crumbly Feta Cheese bring the Juicy Grilled Chicken up a Notch in Flavour and Fanciness!

To make this delicious chicken you start by dicing, then mixing the roma tomatoes with the balsamic vinegar, fresh basil, oregano and salt. Add the feta cheese to the bowl, then let marinate for 10 – 15 minutes. Place the feta and tomatoes into a folded piece of tinfoil or a bbq safe (cast-iron) pan.

Preheat grill to medium high heat. Place the tomatoes on the grill. Season the chicken breasts with salt and pepper, then put them on the grill as well.

4 (3oz) Chicken Breasts

1 Tbsp Butter

2 Roma Tomatoes

1 Tsp Balsamic Vinegar

1 Tsp Fresh Basil

1. Dice, then mix the roma tomatoes with the balsamic vinegar, fresh basil, oregano and salt. Add the feta cheese to the bowl, then let marinate for 10 – 15 minutes. Place the feta and tomatoes into a tightly folded piece of tinfoil or a bbq safe (cast-iron) pan.

2. Preheat grill to medium high heat. Place the tomatoes on the grill. Season the chicken breasts with salt and pepper, then place them on the grill as well.  Flip the chicken once, then brush it with the melted butter after flipping. Grill until cooked through, about 5-6 minutes on each side. Remove the feta and tomatoes after about 7-8 minutes.

3. Serve the chicken with the feta and tomatoes placed on top.

RECIPE NOTES:

– The chicken can be prepared in the oven or in a frying pan on the stove, instead of a bbq. Just season and cook the same way as directed.

– The feta cheese can be swapped out for goat cheese, paneer, halloumi or ricotta cheese.

– For even more flavour marinate the feta and tomatoes in the balsamic vinegar and herbs overnight.

– The tomatoes and feta can be cooked in a frying pan on the stove or in an oven safe dish or in tinfoil in the oven. Just marinate and cook them the same way.

– Garnish the chicken with chopped fresh basil or parsley.

How do you make a Keto Tuna Melt?

To make these tasty Cheesy Keto Tuna Melts, you spread out the mozzarella slices onto 2 parchment paper (Not Wax Paper) lined baking sheets. Then in a bowl, mix the drained cans of tuna with the mayonnaise and minced celery. Stir until very well combined.

Bake the cheese slices, until fully melted, approx. 4-5 mins. Remove from the oven and let cool slightly before adding a few spoonfuls of tuna to the corner of each of the cheese shells. Then fold the squares in half, making triangle shapes. Firmly press the sides closed. Return to the oven for another 5 – 10 minutes or until the edges are golden brown.

How To Make Easy Keto Raspberry Turnovers

To make these Tasty Keto Raspberry Cheese Turnovers, you preheat your oven to 375 F. Then Spread out the mozzarella slices onto 2 parchment paper (Not Wax Paper) lined baking sheets. Then, bake the cheese slices, until the edges are golden brown approx. 3-4 mins.

Use a mixer to mix the cream cheese, heavy cream and 1 Tbsp of the swerve, until smooth. Remove the cheese slices from the oven and let cool slightly. Then add 2 tsp of the cream cheese mixture to the corner of each of the cheese shells. Place 2 raspberries onto each of the turnovers.

These Family Friendly, 5 Ingredient Keto Zucchini Fritters can be whipped up in Under 30 minutes. They’re naturally Gluten Free, are high in Healthy Fats and Protein and are a great way to sneak in some extra veggies. They make a deliciously healthy appetizer, lunch or snack and can be made ahead of time and reheated.

How to make Keto Zucchini Fritters

To make these delicious Keto Zucchini Fritters, you grate the zucchini then place in a strainer over a bowl. Press as much liquid out as you can. You can also squeeze the liquid out using a clean kitchen towel or cheese cloth.

Using a blender, blend the eggs and cream cheese until smooth. Add the coconut flour and baking powder to the blender and blend until smooth.

Then in a large bowl add the shredded and strained zucchini and batter. Mix until well combined. In a buttered frying pan, over medium heat, fry the Zucchini fritter batter a 1/4 cup at a time.

Directions

– Let the zucchini fritters fully brown before flipping. If they break apart just press them bake together with a spatula.

–  Press down on the fritters with a spatula, after flipping over.

– If you like a thicker batter add 1 Tbsp extra of the coconut flour.

– The butter can be switched out for coconut oil or your preferred keto cooking oil.

– If making as an appetizer, make 12 smaller fritters instead making 6.

– For extra crispy fritters, bake in the oven after frying at 400 F, for 5 – 10 minutes.

Best Served with Sour Cream and Salt and Pepper.

This Gluten Free & Keto French Toast Casserole is a Quick Breakfast Bake Made with Low Carb Fathead Dough, Eggs and Cinnamon. It’s the Perfect Easy Keto Breakfast or Brunch For the Holidays. If your Family loves French Toast then they’re gonna love this Delicious Casserole. It’s really quick to make and tastes just as good as the original.

How Do You Make Keto French Toast Casserole?

To make this easy Keto French Toast Casserole, melt the shredded mozzarella and the cream cheese in a frying pan over medium heat. Remove from the heat, then stir the melted cheeses until they’re well combined. Using a mixing bowl, add the almond flour, coconut flour, baking powder, xanthan gum and eggs to the cheese mixture. Mix until well combined.

On a cookie sheet, press the dough into a rectangle between 2 pieces of parchment paper.  Approximately 10 ” x 8″. Remove the top piece of parchment paper, then poke some holes in it with a fork. Brush with the melted butter. Then combine and sprinkle half of the sweetener and cinnamon over the top.  Bake 8 – 10 minutes.

Remove from the oven, then cut into 1/2 ” squares. Place the bread squares into a very well buttered, 8″ square baking dish. Mix the 6 eggs with the heavy cream, then pour it over the cubed bread. Then sprinkle the remaining sweetener and cinnamon over the top. Dot the top with the butter, then bake for 18 – 20 minutes.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When in ketosis, your body switches to burning fat for its primary fuel source.

Ingredients

  • For The Fathead Dough:
  • 2 Cups Mozzarella Cheese Shredded
  • 3 Tbsp Cream Cheese
  • 2 Eggs
  • 1/2 Cup Almond Flour
  • 1/4 Cup Coconut Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Xanthan Gum optional
  • 2 Tbsp Melted Butter
  • For the Casserole:
  • 6 Eggs
  • 1/4 Cup Heavy Cream
  • 2 Tbsp Powdered Sweetener
  • 1/2 Tsp Cinnamon
  • 2 Tsp Butter

Instructions

  • Pre Heat oven to 400 F. Melt the shredded mozzarella and the cream cheese in a frying pan over medium heat. (This step can also be done in a microwave) Remove from the heat, then stir the melted cheeses until they’re well combined. Using a mixing bowl, add the almond flour, coconut flour, baking powder, xanthan gum and eggs to the cheese mixture. Mix until well combined.
  • On a baking pan, press the dough into a rectangle between 2 pieces of parchment paper. Approximately 10 " x 8". Remove the top piece of parchment paper, then poke holes in it with a fork. Brush with the melted butter. Then combine and sprinkle half of the sweetener and cinnamon over the top. Then bake 8 - 10 minutes.
  • Remove from the oven, then cut into 1/2 " squares. Place the bread squares into a very well buttered, square baking dish. Mix the 6 eggs with the heavy cream, then pour it over the cubed bread. Sprinkle with the remaining sweetener and cinnamon over the top. Dot the top with the butter, then bake for 18 - 20 minutes.
  • This recipe makes 1 batch of Keto French Toast Casserole.

These Delicious Homemade Gluten Free & Keto Sausage Rolls are Perfect for Holiday Entertaining. They’re a Low Carb Sausage Roll which is Made with an Easy to Make Mozzarella Cheese Based Fathead Dough. The simple fathead dough is a perfect match for the juicy and flavourful sausage mixture. They’re a Tried and Tested Favourite!

How Do You Make Homemade Keto Sausage Rolls with Fathead Dough?

To make this Delicious Keto Fathead Sausage Roll Recipe, you need to start with making the fathead dough. Melt the shredded mozzarella and the cream cheese in a frying pan over medium heat. (This step can also be done in a microwave) Remove from the heat, then stir the melted cheeses until they’re well combined. Using a mixing bowl, add the almond flour, coconut flour, baking powder, xanthan gum and 2 of the eggs to the cheese mixture. Mix until well combined.

Then make the filling in a large bowl. Mix the raw sausage (removed from the casings) with the minced onion and celery. Add the onion and garlic powder and salt and pepper. Mix thoroughly.

Along one side of a long piece of parchment paper, spread the dough into a long tube (approx 20 “). Fold the parchment paper in half over the fathead dough tube. Use your hands or a rolling pin to press the dough into a flat rectangle. A recipe tip: I folded the edges of the parchment paper and dough, then pressed it back down with the edge still folded, to make a nice flat edge.

Once you have a nice long rectangle, spread the sausage mixture evenly along one side of it. Leave about an inch to seal the dough. Then brush the edge with beaten egg. Use the parchment paper to flip tho dough over the line of sausage. Press the dough gently together until sealed. Divide the sausage rolls into 10, 2” sections, then use a knife to cut the rolls. Place the rolls on their side (dough down) on a parchment paper lined baking pan. Poke each of the rolls with a knife, then generously brush with the remaining beaten egg. Bake for 25 -30 minutes.

This Keto Sausage Roll Recipe is really easy to make. The Sausage Rolls can be served either hot or cold and can be made with many variations. I used sausage links and removed the meat from the casings but you can buy ground sausage that’s not in the casings. You can also use ground pork or even ground chicken instead.

Recipe Notes:

  • To keep the sausage rolls from getting soggy, I switched out the greasy piece of parchment paper for a fresh piece half way through baking. (I had a second pan ready to go)
  • For the last few minute of baking, I turned my oven to broil. Then turned the rolls on their sides to brown the edges a bit more. When doing this step, make sure to watch them very closely.
  • This Recipe Makes 10 Keto Sausage Rolls.

This Gluten Free & Keto Loaded Broccoli Cauliflower Salad makes a perfect low carb side dish for family dinners or gatherings. It’s a hearty salad that’s loaded with crispy crunchy ingredients. It will even please your non salad loving dinner guests. I mean who doesn’t love Cheese and Bacon?

How Do You a  Make Keto Broccoli and Cauliflower Salad?

To make this delicious Loaded Broccoli Cauliflower Salad, you trim and cut the cauliflower into bite sized pieces. Then boil or steam  it until it’s tender, approximately 10 minutes. Drain and it cool completely. Then trim and cut the broccoli into bite sized pieces and add to a mixing bowl along with the cooked and cooled cauliflower.

In a separate bowl, mix the mayonnaise, sour cream, vinegar and salt and pepper. Mix until well combined, then pour over the broccoli and cauliflower. Toss until the veggies are well coated. Cook and crumble the bacon.

Then sprinkle the grated cheese, chopped green onion and crumbled bacon over the broccoli and cauliflower salad.  Gently toss, then serve.

  • 8 Slices Bacon
  • 1/2 Cup Cheddar Cheese
