Low Carb Roasted Vegetable Salad

This Keto & Low Carb Roasted Vegetable Salad is the Perfect Salad for Summer BBQ’s. It’s an Easy to Make Fresh Salad that combines perfectly Roasted Cauliflower and Roasted Bell Peppers with Cucumbers and Feta Cheese. It’s then tossed in a delicious balsamic dressing and fragrant fresh herbs. The yummy salad is a perfect side dish for whatever you’re Grilling!

How To Make a Low Carb Roasted Vegetable Salad

To make this Low Carb Roasted Vegetable Salad, you start by preheating your bbq or oven to 400 F.  Next, chop the peppers and cauliflower into 1 inch pieces. Place the vegetables into a mixing bowl and drizzle with the olive oil. Season with salt and pepper, then mix until the vegetables are fully coated in the oil. Spread the veggies onto a cookie sheet or bbq safe roasting pan.

Put the pan onto the top rack of your bbq or into a preheated oven. Roast the vegetables for 7 – 8 minutes or just until tender. Remove from the heat and let cool completely. Dice up the cucumber and chop the fresh herbs. Add both to the mixing bowl with the cooled vegetables.  Then cover with the balsamic dressing and feta cheese. Mix until the salad is fully coated in the dressing. Garnish with a piece of fresh parsley or basil.

WHAT IS THE KETOGENIC DIET?

If you haven’t heard of The ketogenic diet (often called keto), it’s a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When in ketosis, your body switches to burning fat for its primary fuel source.

On Keto, you’re supposed to get at least 70 percent of your calories from Fat, 15 to 25 percent from Protein, and 10 percent from Carbohydrates. You should avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

This recipe for a Simple Summery Low Carb Roasted Vegetable Salad is made with only fresh ingredients and is naturally gluten free and keto! It’s an Easy To Make Family Friendly Recipe that’s sure to please. There are many other low carb vegetables that can be added to this salad. Some of the things that I like to add to the roasting pan are onion (purple or white), mushrooms, radishes, broccoli or Zucchini.

Ingredients

1 Red Bell Pepper

1 Green Bell Pepper

1 Yellow Bell Pepper

1/2 of Head Cauliflower

3/4 Cup Diced Cucumber

1/2 Cup Feta (crumbled)

1 1/2 Tbsp Olive Oil

Salt and Pepper (to taste)

2 Tbsp Balsamic Salad Dressing

1/4 Cup Fresh Basil (chopped)

1/4 Cup Fresh Parley (chopped)

Directions

1. Preheat your bbq or oven to 400 F. (if your bbq doesn’t have a thermometer, preheat it on medium low heat for 4 – 5 minutes)

2. Chop the peppers and cauliflower into 1 inch pieces. Place the vegetables into a mixing bowl and drizzle with the olive oil. Season with salt and pepper, then mix until the vegetables are fully coated in the oil. Spread the veggies onto a cookie sheet or bbq safe roasting pan.

3. Place the pan onto the top rack of your bbq or into a preheated oven. Roast the vegetables for 7 – 8 minutes or just until tender. Remove from the heat and let cool completely. (Once the veggies have cooled enough… put them into the refrigerator)

4. Dice up the cucumber and chop the fresh herbs. Add both to the mixing bowl with the cooled vegetables.  Then cover with the balsamic dressing and feta cheese. Mix until the salad is fully coated in the dressing. Store in the refrigerator until ready to serve. Garnish with a piece of fresh parsley or basil.

This recipe for Low Carb Roasted Vegetable Salad makes 8 servings.

Low Carb Roasted Vegetable Salad

Recipe Notes:

– If your bbq doesn’t have a top rack… the vegetables can roasted in a tin foil sac or in a roasting pan directly on the grill. Just be sure to flip or stir it a few times throughout cooking.

– If you don’t have a bbq… the vegetables can be roasted in the oven on 400 F. for 8 – 10 minutes. They can also be made in a well oiled frying pan over medium heat, fried just until tender.

– A homemade balsamic salad dressing can be made by using 1 part balsamic vinegar and 1 part olive oil.

– An average bell pepper is 175 g or 6 oz.

How to Make Keto Loaded Broccoli Cauliflower Salad

To make this delicious Loaded Broccoli Cauliflower Salad, you trim and cut the cauliflower into bite sized pieces. Then boil or steam  it until it’s tender, approximately 10 minutes. Drain and it cool completely. Then trim and cut the broccoli into bite sized pieces and add to a mixing bowl along with the cooked and cooled cauliflower.

In a separate bowl, mix the mayonnaise, sour cream, vinegar and salt and pepper. Mix until well combined, then pour over the broccoli and cauliflower. Toss until the veggies are well coated. Cook and crumble the bacon.

These Gluten Free BBQ Cauliflower Wings have the perfect Crunch and Sticky Sweetness. My family likes them just as much as they like Chicken Wings.  I love an affordable meal that I can sneak in there during the week and these Gluten Free BBQ Cauliflower Wings are a Fraction of the Price of Chicken wings. They’re perfect for if you do No-Meat Monday’s or are trying to eat Less Meat. I try to make Vegetarian meals at least a few times a week. It goes a long way on our grocery bills and we never miss the meat.

To make this easy recipe, you whip up a quick batter using rice flour and your choice of starch. I use Potato Starch but you can use Tapioca or Corn Starch instead if you’d prefer to. Coat the Cauliflower Pieces in the Batter. Place them onto a Baking Sheet and Roast for 20 minutes.

Toss the Roasted Cauliflower in the BBQ Sauce and Roast for another 5 – 10 minutes. We like it Served with a Side of Blue Cheese or Ranch Dressing and Veggie Sticks, usually Carrots and Celery or whatever I have in the Fridge.

Have you tried Cauliflower Wings yet?  They’re even tastier then I expected them to be. They’ve replaced Chicken Wings at our house. I was making the Hot Sauce Version of this recipe a lot but my Son wouldn’t touch it because they were Too Hot. So I decided to Switch it up and use my favourite Gluten Free BBQ Sauce (Sweet Baby Rays) on them instead. My son loved it and My husband and I both preferred the BBQ sauce too. I’ve been making them this way ever since. They make a perfect appetizer or make a great side with rice and steamed vegetables.

Gluten Free BBQ Cauliflower Wings

Ingredients 

1 Head Cauliflower

1/2 Cup Rice Flour

1/4 Cup Potato Starch

1/2 Tsp Garlic Powder

1/2 Tsp Salt

1/2 Cup Water

4 Tbsp Butter

1 Cup Gluten Free BBQ Sauce

Directions 

1. Pre heat oven to 425 F.

2. Wash then chop the cauliflower into bite sized pieces.

3. In a large bowl mix the rice flour, potato starch, garlic powder and salt. Add the water then mix into a paste. Add the cauliflower pieces and stir until they’re well coated.

4. Grease a baking sheet with 2 Tbsp of the melted butter. Then place the coated cauliflower pieces onto the greased baking sheet. Keep some space between the pieces.

5. Bake for 5 minutes, remove from the oven but don’t turn them.  Brush the tops with the remaining butter. Place back into the oven and bake for another 10 minutes. Turn and bake for another 5 minutes.

6. In a large bowl gently mix the roasted cauliflower with the bbq sauce until well coated. Then place back onto the baking sheet. Bake for another 5 to 10 minutes.

Note: This Recipe can be made Vegan by switching out the Butter for Cooking Oil, Margarine or Coconut Oil.

This gluten free Roasted Cauliflower Corn Chowder is made with Oven Roasted Cauliflower and is loaded with Peppers and Corn. It’s topped off with some delicious cheese and crispy bacon, which makes it so creamy and flavorful. I like to wait until the very end to add the bacon because it keeps it’s crispness if it isn’t in the pot too long.  Try adding Chicken or switch the Mozzarella for Havarti or Gouda for an even more flavorful taste. Serve with a side of Gluten Free Potato Flatbread.

Ingredients 

1/2 of a Package of Bacon

1/2 of a White Onion

4-6 Cloves of Garlic

1 Large Potato

1 Head of Cauliflower

1/2 of a Red Pepper

1 Cup Corn

3 Cups Water

1 1/2 Cups Milk

3 Tbsp Butter

2 Tbsp Rice Flour

1 Tbsp Corn Starch

3 Tbsp Heavy Cream

3/4 Cup Shredded Mozzarella Cheese

1/2 -1 Tsp Salt

1/2 Tsp Pepper

Directions

1. Pre heat oven to 325 F.

2. Cut the cauliflower into pieces and roast in the oven for 20 minutes.

3. Fry the bacon. Keep the bacon grease and set the bacon aside to cool.

4. In a large pot, dice, then fry the onion and garlic, in the bacon grease.

5. Peel then dice the potato, then add to the pot. Let fry for a few minutes, then cover with 1 cup of water. Cover and let simmer on low for 15 minutes.

6. Cut the roasted cauliflower into bite sized pieces, then add to the pot. Add 2 more cups of water.

7, In a separate pot, melt the butter. Then add the rice flour and cornstarch. Slowly stir in 1 cup of milk. Stir constantly until it begins to boil, then add to the main pot. Stir until well combined, then add another 1/2 cup of milk to the pot.

8. Chop, then add the red pepper, then the corn. Add the cheese then stir until well combined.

9. Let simmer on low for 20 minutes. Dice then add the bacon, . Add salt and pepper to taste.
