This Delicious Creamy Cucumber Salad Recipe is made with only 5 Budget-Friendly Ingredients! The Simple Salad is made with thinly sliced English Cucumbers generously drenched in Sour Cream, and seasoned with a little Fresh Dill and cracked Salt and Pepper.  It’s the perfect Low Carb Side Dish or makes a Refreshing Gluten Free Snack that comes together in Minutes.

What is Cucumber Salad?

Cucumber Salad is a total classic! It’s light, refreshing, and easy to make. There are two different versions of Cucumber Salad that you might find, one having a light vinegar dressing, the other being a creamy version. This recipe is for the creamy version. There are slight variations out there, of course, but this version is our absolute favourite.

What’s in Cucumber Salad?

This salad only uses simple and budget-friendly ingredients. Here’s what you’ll need:

  • Cucumbers: I recommend English cucumbers as they’re sweeter, have a slightly thinner skin, with less seeds. You can use any type of cucumbers for this salad.
  • White Onion: I use a white onion here, but red onion or scallions would also be delicious.
  • Dill: Fresh dill really makes this salad taste so fresh and delicious.
  • Sour Cream: Makes up the base of the creamy sauce in this salad.
  • Salt & Pepper: Season to taste.

How Do You Make Creamy Cucumber Salad?

To make this delicious Low Carb Creamy Cucumber Salad:

Step 1: Use a peeler or knife to remove some of the cucumber’s skin. Then Slice the cucumber into thin slices and add to a mixing bowl.

Step 2: Mince the onion and add it along with the cucumbers. Chop the fresh dill and add it to the bowl as well. Next add the salt and pepper to the salad.

Step 3: Add the sour cream and mix until the cucumber slices are completely coated in the sour cream.

How Long Will it Last in the Fridge?

It’s easy to devour this salad in one sitting, especially if you’re serving it for a small group. But if you have leftovers, store it in an airtight container in the fridge for 2 to 3 days. Just note that the salad will become a bit watery over time.

Dressing: Creamy or Vinaigrette

I like the creaminess of the sour cream version of this salad but the vinaigrette version is also delicious. If you prefer a Cucumber Salad with a Vinegar Style Dressing, you can simply replace the dressing in this recipe with:

  • 1/4 cup white vinegar, rice or cider vinegar
  • 2 tablespoons light olive oil
  • 2 teaspoons sugar (or low carb substitute)
  • 2 tablespoons fresh dill
  • salt & pepper

To Make This Cucumber Salad Ahead

If your eating the cucumber salad immediately, it won’t matter as much but when making ahead, it can become watery over time. One way to avoid the extra water is to season cucumbers with salt in a large colander and let sweat 1 hour.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, that’s when you hit ketosis.

While on the Keto diet you’re supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. You’re supposed to avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

Recipe Notes:

– Use a mandoline slicer to cut the cucumbers in this recipe for even slicing that’s extra thin.

– Fresh dill is strongly preferred in this recipe. If you can’t find fresh dill, you can use dried dill. Use only 1 to 2 teaspoons of dried dill.

– Use thin-skinned cucumbers like English Cucumbers, for the least bitterness and best flavour. Waxy cucumbers will work but you will need to peel and possibly seed them first.

– Instead of sour cream, you can also use mayo, or plain Greek yogurt.

– This recipe makes 4 servings.

This Mediterranean Broccoli Salad is quick and refreshing! It features four simple key ingredients: broccoli, cucumbers, purple cabbage and parsley. The summery salad is tossed in a light lemony dressing and topped with feta cheese!

Ingredients you’ll need

To make this deliciously summery broccoli salad, you’ll need broccoli, cucumbers, purple cabbage (which has a lot less carbs than red onion), fresh garlic, lemon juice, olive oil, dried oregano and salt.

What else can I add to this?

This basic Mediterranean salad has several variations and you can change it up to your liking. Here are a few ideas:

  • Add chopped onions such as red onions, shallots, or green onions.
  • Use more fresh herbs! In addition to parsley, you can add some chopped fresh mint leaves or dill.
  • Toss in some tomato, I do sometimes add small pieces of tomatoes.
  • Olives are a great addition to this Mediterranean style salad. They also make a great garnish.
  • Add crispy crumbled bacon to the top of the salad.

How to make a Mediterranean Broccoli Salad

  1. Chop the vegetables and herbs. I like this recipe best with the raw broccoli chopped into bite size pieces, the cucumbers unpeeled and minced into small pieces, the purple cabbage chopped small, and the garlic and parsley chopped finely.
  2. Dress the salad. This salad has a really simple dressing that can be made right over the vegetables. Sprinkle the ingredients with, olive oil, dried oregano, salt, and lemon juice.
  3. Add in the cubes of feta cheese. While this does call for the feta cheese cubed, you could also use crumbled.
  4. Toss the salad to combine and enjoy.

Storing Leftovers

This Mediterranean broccoli salad is best when eaten right after it is made. That being said, it will still be delicious as leftovers. Store any leftovers in an airtight container in the refrigerator for up to three days.

This Keto Mediterranean Broccoli Salad Recipe requires minimal effort and only uses simple and easy to find ingredients like Broccoli, Purple Cabbage and Cucumber. The delicious Mediterranean salad  are also naturally high in fiber and is paleo and low carb as well as gluten free.

Since this broccoli salad is such a summery dish I like to serve it with an equally summery side dish like my Keto Chicken Kabobs or my Grilled Chicken Satay. They’re perfect for impressing guests or for spoiling someone special.

Recipe Notes:

– The mayonnaise can be switched out for greek yogurt if preferred.

– You can use red onion in place of the purple cabbage. I like to use purple cabbage instead because it has considerably less of carbs than the red onion does. I also like the crunch that the cabbage adds.

– This salad recipe can be made with store bought greek dressing instead of using the lemon juice and olive oil.

This Easy to Make Dill Pickle Chicken Salad Recipe is made with Rotisserie Chicken and Crunchy Dill Pickles. The Low Carb Chicken Salad is a delicious twist to traditional chicken salad. It’s loaded with chunks of dill pickle and fresh dill. The Crunchy Salad can eaten on a Sandwich or for Low Carb and Keto the chicken salad can be eating in a Lettuce Wrap or by itself as a Salad Bowl.

How Do You Make Dill Pickle Chicken Salad?

To make this Delicious Keto Dill Pickle Chicken Salad Recipe:

Step 1: Using a cutting board and a knife, chop the cold chicken into small bits. Use a mixing bowl to mix the cold chopped cooked chicken with the mayonnaise, sour cream and mustard.

Step 2: Dice and the pickles and mince the celery and onion, then add them to the bowl. Chop up the fresh dill and add it in along with the salt. Mix the chicken salad until all the ingredients are mixed through.

Make this Low Carb Roasted Vegetable Salad Recipe in 4 Easy Steps:

Step 1: Start by preheating your bbq or oven to 400 F.  Next, chop the peppers and cauliflower into 1 inch pieces. Place the vegetables into a mixing bowl and drizzle with the olive oil. Season with salt and pepper, then mix until the vegetables are fully coated in the oil. Spread the veggies onto a cookie sheet or bbq safe roasting pan.

Step 2: Put the pan onto the top rack of your bbq or into a preheated oven. Roast the vegetables for 7 – 8 minutes or just until tender. Remove from the heat and let cool completely.

Step 3: Dice up the cucumber and chop the fresh herbs. Add both to the mixing bowl with the cooled vegetables.

Step 4: Cover with the balsamic dressing and feta cheese. Mix until the salad is fully coated in the dressing. Garnish with a piece of fresh parsley or basil.

– If your bbq doesn’t have a top rack… the vegetables can roasted in a tin foil sac or in a roasting pan directly on the grill. Just be sure to flip or stir it a few times throughout cooking.

– If you don’t have a bbq… the vegetables can be roasted in the oven on 400 F. for 8 – 10 minutes. They can also be made in a well oiled frying pan over medium heat, fried just until tender.

– A homemade balsamic salad dressing can be made by using 1 part balsamic vinegar and 1 part olive oil.

– An average bell pepper is 175 g or 6 oz.

  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 Yellow Bell Pepper

Instructions

  • Preheat your bbq or oven to 400 F. (if your bbq doesn't have a thermometer, just preheat it on medium low heat for 4 - 5 minutes)
  • Chop the peppers and cauliflower into 1 inch pieces. Place the vegetables into a mixing bowl and drizzle with the olive oil. Season with salt and pepper, then mix until the vegetables are fully coated in the oil. Spread the veggies onto a cookie sheet or bbq safe roasting pan.

2 Cups Spring Mix (or Lettuce)

1 Cup Cooked Shredded Chicken

1/4 Cup Franks Red Hot Sauce

2 Tbsp Melted Butter

1 Avocado

2 Limes or 1/4 Cup Lime Juice

These Delicious Homemade Gluten Free & Keto Garlic Butter Croutons are Made with Easy to make Fathead dough that’s Drenched in Garlic Butter, then Slowly Baked to Perfection. They add the perfect  Tasty Crunch to a Low Carb Salad or Soup.

How Do You Make Keto Garlic Butter Croutons?

To make these Tasty Keto Garlic Butter Croutons, you start by melting the shredded mozzarella and the cream cheese in a frying pan over medium heat. Remove from the heat, then stir the melted cheeses until they’re well combined.

Using a mixing bowl, add the almond flour, coconut flour, baking powder, xanthan gum and eggs to the cheese mixture. Mix until very well combined. Then, between 2 pieces of parchment paper press the dough into a rectangle. Remove the top piece of parchment paper, then brush with 2 tbsp of the melted butter. Sprinkle with 1 tsp of garlic powder. Bake for 8 – 10 minutes, or until golden brown.

Remove from the oven, then cut into 1/4 ” squares. Over medium heat, melt the remaining butter in a large frying pan. Add the remaining garlic powder to the melted butter, then place the bread squares into  the pan. Stir until all the pieces are well coated with butter. Brown for approximately 5 minutes, stirring as it cooks.

Spread a fresh piece of parchment paper on top of a cookie sheet. Then spread the croutons evenly on the pan. Leave as much space between them as possible. Bake for 16 – 18 minutes, or until the croutons are golden brown and crunchy.

I’ve gone years without them and I’ve missed their delicious crunchiness… So I decided to make some with fathead dough. I’m glad I did because they’ve turned out perfect every time and I haven’t had a salad without since.

Recipe Notes:

– Store on the counter uncovered for 1 – 2 days, then they can be stored in a container or zip lock bag for up to 1 week after that.

– Melting the shredded mozzarella and the cream cheese in a microwave depends on how powerful you microwave is. My rule of thumb is to melt the cheese in increments of 30 seconds and stir. I did 2 30 seconds and an extra 15.

– When making the fathead dough it feels like it’s going to be too wet at first but if you keep mixing it, it thickens. It’s important for it to be mix very well.

– You can add some extra flavour to the croutons by mixing in a little basil, rosemary, oregano or parsley with the garlic powder.

(This step can also be done in a microwave) Remove from the heat, then stir the melted cheeses until they’re well combined. Using a mixing bowl, add the almond flour, coconut flour, baking powder, xanthan gum and eggs to the cheese mixture. Mix until very well combined.
  • Between 2 pieces of parchment paper, press the dough into a rectangle. Approximately 10 ” x 8″. Remove the top piece of parchment paper, then poke some holes in it with a fork. Brush with 2 tbsp of the melted butter. Then sprinkle with 1 tsp of garlic powder. Bake for 8 - 10 minutes, or until golden brown.
  • Remove from the oven, then cut into 1/4 ” squares. Over medium heat, melt the remaining butter in a large frying pan. Add the remaining garlic powder to the melted butter, then place the bread squares into the pan. Stir until all the pieces are well coated with butter. Brown for approximately 5 minutes, stirring as it cooks.

This Gluten Free & Keto Loaded Broccoli Cauliflower Salad makes a perfect low carb side dish for family dinners or gatherings. It’s a hearty salad that’s loaded with crispy crunchy ingredients. It will even please your non salad loving dinner guests. I mean who doesn’t love Cheese and Bacon?

How Do You a  Make Keto Broccoli and Cauliflower Salad?

To make this delicious Loaded Broccoli Cauliflower Salad, you trim and cut the cauliflower into bite sized pieces. Then boil or steam  it until it’s tender, approximately 10 minutes. Drain and it cool completely. Then trim and cut the broccoli into bite sized pieces and add to a mixing bowl along with the cooked and cooled cauliflower.

In a separate bowl, mix the mayonnaise, sour cream, vinegar and salt and pepper. Mix until well combined, then pour over the broccoli and cauliflower. Toss until the veggies are well coated. Cook and crumble the bacon.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When in ketosis, your body switches to burning fat for its primary fuel source.

On Keto, you’re supposed to get at least 70 percent of your calories from Fat, 15 to 25 percent from Protein, and 10 percent from Carbohydrates. You should avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

Ingredients

  • 2 Cups Broccoli
  • 2 Cups Cauliflower
  • 8 Slices Bacon
  • 1/2 Cup Cheddar Cheese
  • 2 Tbsp Green Onion
  • 4 Tbsp Mayonnaise
  • 2 Tbsp Sour Cream
  • 1 Tbsp Vinegar
  • Salt and Pepper to taste

Instructions

  • Trim and cut the cauliflower into bite sized pieces. Boil or steam until tender, approximately 10 minutes. Drain and cool completely. Trim and cut the broccoli into bite sized pieces and add to a mixing bowl along with the cooked and cooled cauliflower.
  • In a separate bowl, mix the mayonnaise, sour cream, vinegar and salt and pepper. Mix until well combined, then pour over the broccoli and cauliflower. Toss until the veggies are well coated.
  • Cook and crumble the bacon. Then sprinkle the grated cheese, chopped green onion and crumbled bacon over the broccoli and cauliflower salad. Gently toss, then serve.
  • This recipe makes 6 Servings of Loaded Broccoli Cauliflower Salad

Mango Salad Rolls

These Gluten Free, Vegetarian, Mango Salad Rolls make a nice light appetizer and are the perfect recipe for a hot summer day. They’re Quick and Easy and there’s no cooking involved. They make a great party food that everyone will love, not just people who are gluten free or vegetarian. For different but equally as tasty Salad Roll, Try adding some cooked Shrimp and Splash of Lime Juice.

Ingredients 

1 Carrot

1/2 of a Red Onion

1/2 of a Red Pepper

1/4 of a Head of Purple Cabbage

1/4 of a Head of Lettuce

1/2 of a Package of Sprouts

1 Mango

8-10 Rice Paper Wrappers

Directions

1. Peel, then thinly slice the carrot. Then wash and thinly slice the red onion, red pepper, cabbage, lettuce and mango.

2. Soak the rice paper wrappers in water 1 at a time, for 30 seconds to 1 minute, or until they are soft enough to work with.

3. Lay out the softened rice paper wrapper on a plate or the counter. Lay a small amount of each of the ingredients in the middle of the roll.

4. Tightly roll up from the bottom first, then fold the sides in. Tightly roll the rest of the way.

Fish Tacos

These Gluten Free Fish Tacos are made with Pickerel, Mango Chutney, Coleslaw, Corn Tortillas and a squeeze of Lime. You don’t have to use Pickerel, any kind of fish will do. You can also use store bought coleslaw instead, if you prefer. Make sure your taco shells are gluten free, some are made with wheat flour. This is a really easy recipe and who doesn’t love Fish Tacos?

Ingredients 

5 Large Pieces of Fish

1 Tbsp Butter

1 Mango

1/2 Cup White Sugar

1/2 of a Small Head of Green Cabbage

1/2 of a Small Head of Purple Cabbage

1 Carrot

1/2 Cup Mayonnaise

1 Tbsp White Sugar

1 Tbsp Vinegar

8 – 10 Gluten Free Corn Tortillas or Taco Shells

2 Limes

Directions 

1. Peel and dice the mango. Then cook in a small pot over low heat with sugar, for 20 – 30 minutes or until it thickens. Make sure to stir it frequently.

2. Thinly slice the red and green cabbage and place into a large bowl. Peel and thinly slice the carrot, then add to the bowl. In a separate bowl mix the mayonnaise, sugar and vinegar until well blended. Pour over the cabbage mixture then mix until its completely covered.

3. Season the fish with salt and pepper, then cook in the butter, in a frying pan over medium heat.

4. Fill the Taco Shells with a small amount of each of the ingredients then serve with a slice of lime.
