This Keto & Low Carb Roasted Vegetable Salad is the Perfect Salad for Summer BBQ’s. It’s an Easy to Make Fresh Salad that combines perfectly Roasted Cauliflower and Roasted Bell Peppers with Cucumbers and Feta Cheese. It’s then tossed in a delicious balsamic dressing and fragrant fresh herbs. The yummy salad is a perfect side dish for whatever you’re Grilling!

What Vegetables Can You Use in a Low Carb Vegetable Salad?

Low Carb Greens: All greens are low carb, including spinach, kale, spring mix, watercress, and all forms of lettuce. Use them in abundance in your salads!

Low Carb Veggies: This list of veggies are low carb and keto approved. Asparagus, Broccoli, Radish, Cauliflower, Bell Peppers, Artichokes, Brussels Sprouts, Cabbage, Cucumber, Egg Plant, Green Beans, Jicama, Mushrooms, Onions, Pumpkin, Squash and Zucchini

How Do You Make a Low Carb Roasted Vegetable Salad?

Make this Low Carb Roasted Vegetable Salad Recipe in 4 Easy Steps:

Step 1: Start by preheating your bbq or oven to 400 F.  Next, chop the peppers and cauliflower into 1 inch pieces. Place the vegetables into a mixing bowl and drizzle with the olive oil. Season with salt and pepper, then mix until the vegetables are fully coated in the oil. Spread the veggies onto a cookie sheet or bbq safe roasting pan.

Step 2: Put the pan onto the top rack of your bbq or into a preheated oven. Roast the vegetables for 7 – 8 minutes or just until tender. Remove from the heat and let cool completely.

Step 3: Dice up the cucumber and chop the fresh herbs. Add both to the mixing bowl with the cooled vegetables.

Step 4: Cover with the balsamic dressing and feta cheese. Mix until the salad is fully coated in the dressing. Garnish with a piece of fresh parsley or basil.

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When in ketosis, your body switches to burning fat for its primary fuel source.

It’s an Easy To Make Family Friendly Recipe that’s sure to please. There are many other low carb vegetables that can be added to this salad. Some of the things that I like to add to the roasting pan are onion (purple or white), mushrooms, radishes, broccoli or Zucchini.

Recipe Notes:

– If your bbq doesn’t have a top rack… the vegetables can roasted in a tin foil sac or in a roasting pan directly on the grill. Just be sure to flip or stir it a few times throughout cooking.

– If you don’t have a bbq… the vegetables can be roasted in the oven on 400 F. for 8 – 10 minutes. They can also be made in a well oiled frying pan over medium heat, fried just until tender.

– A homemade balsamic salad dressing can be made by using 1 part balsamic vinegar and 1 part olive oil.

– An average bell pepper is 175 g or 6 oz.

Ingredients

  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 1 Yellow Bell Pepper
  • 1/2 of Head Cauliflower
  • 3/4 Cup Diced Cucumber
  • 1/2 Cup Feta crumbled
  • 1 1/2 Tbsp Olive Oil
  • Salt and Pepper to taste
  • 2 Tbsp Balsamic Salad Dressing
  • 1/4 Cup Fresh Basil chopped
  • 1/4 Cup Fresh Parley chopped

Instructions

  • Preheat your bbq or oven to 400 F. (if your bbq doesn't have a thermometer, just preheat it on medium low heat for 4 - 5 minutes)
  • Chop the peppers and cauliflower into 1 inch pieces. Place the vegetables into a mixing bowl and drizzle with the olive oil. Season with salt and pepper, then mix until the vegetables are fully coated in the oil. Spread the veggies onto a cookie sheet or bbq safe roasting pan.

  • Dice up the cucumber and chop the fresh herbs. Add both to the mixing bowl with the cooled vegetables. Then cover with the balsamic dressing and feta cheese. Mix until the salad is fully coated in the dressing. Garnish with a piece of fresh parsley or basil.

This Keto & Low Carb Chicken Club Sandwich is the easiest way to eat a Clubhouse Sandwich without eating all the Carbs. The Sandwich is essentially bread free. Instead it’s made Lettuce Wrap Style… using lettuce leaves between the layers instead of bread.

How To Make a Low Carb Chicken Club Sandwich

To make this Keto & Low Carb Chicken Club Sandwich, you start by cooking the bacon and warming up the cooked chicken. Then cut the 6 large lettuce leaves into square(ish) shapes. Lay 2 lettuce leaves onto a plate and spread 1/2 of the mayonnaise onto it.

Next lay the ham, chicken and cheese on top. Cover the meat with another 2 lettuce leaves and spread the other 1/2 of the mayonnaise on top of them. Place the tomato slices and bacon on top of that. Cover with the last two lettuce slices, then poke 4 tooth picks or skewers into the middle of each of the corners. Slice the sandwich into 4, by slicing corner to corner.

  • Using a store bought roasted chicken works well for this recipe. Deli Chicken slices can also be used if preferred.
  • I used clean scissors to cut the lettuce leaves into a nice square shape.
  • The Clubhouse can be wrapped with folded parchment or waxed paper before slicing if you need a less messy on the go option.
  • This recipe makes 2 servings or 4 small sandwiches.

They make a great Keto Appetizer or Snack for Game Day or for serving at Holiday Parties. They can be Thrown Together Quickly and can also be Made Ahead and Warmed up right before Serving.

How To Make Keto Jalapeño Popper Taquitos

To make these Keto Jalapeño Popper Taquitos you start by, preheating your oven to 400 F. Then in a small bowl mix the softened cream cheese with the diced pickled jalapeños and the shredded havarti cheese. Mix until well combined. Then use a microwave to warm the mixture, 25 – 30 seconds should be enough.

Cut the cheese slices in half then place them onto a parchment paper lined baking sheet. Bake for 4 – 5  minutes, or until the edges are golden brown. Let cool for 1- 2 minutes. Flip upside down, then place a few spoonfuls of the jalapeño cream cheese on the edge of each shell. Tightly roll each one into a cigar shape. ( You need to do this quite quickly, before the cheese hardens )

This Gluten Free and Keto Jalapeño Popper Taquitos recipe couldn’t be more simple. With only 4 ingredients there’s not much that can go wrong. I use pre sliced mozzarella cheese slices, which makes this recipe extra easy. Small piles of shredded mozzarella can be used instead of the cheese slices if needed.

Recipe Notes:

  • Use Parchment Paper (NOT waxed paper)
  • To reheat, preheat oven to 350 F. Bake for 4-5 minutes (if cold, a little less if room temp).
  • I let cheese shell cool for a minute then flipped it over before putting the filling onto it. This step isn’t necessary but I found that it made the taquitos look a little prettier.
  • Fresh Jalapeños can be used instead of the pickled jalapeños.
  • Removing the seeds from the Jalapeños makes them considerably less spicy.
  • This recipe makes 12 Keto Jalapeño Popper Taquitos.

Ingredients

  • 6 Mozzarella Cheese Slices
  • 1/2 Cup Cream Cheese
  • 1/4 Cup Pickled Jalapeños diced
  • 1/4 Cup Shredded Havarti Cheese

Instructions

  • Preheat oven to 400 F. Then in a small bowl mix the softened cream cheese with the diced pickled jalapeños and the shredded havarti cheese. Mix until well combined. Then use a microwave to warm the mixture, 25 - 30 seconds should be enough.
  • Cut the cheese slices in half then place them onto a parchment paper lined baking sheet. Bake for 4 - 5 minutes, or until the edges are golden brown.
  • Let cool for 1- 2 minutes. Flip upside down, then place a few spoonfuls of the jalapeño cream cheese on the edge of each shell. Tightly roll each one into a cigar shape. ( You need to do this quite quickly, before the cheese hardens.)

To make this delicious breakfast for one, you start by beating the eggs. Then add the butter to a frying pan. Once the butter is melted, add the eggs to the pan. Place the pickled jalapeños into the eggs, then let cook until the bottom is browned. (Approx 2 – 3 minutes).

This Jalapeño Cream Cheese Omelette recipe is Naturally Gluten Free & Keto. It makes an easy breakfast, that only needs a few ingredients to make. It’s been my go to breakfast for the last year because it’s so satisfyingly delicious. Pickled Jalapeños are my personal favourite but they can easily be swapped out for fresh jalapeños. I cut the fresh jalapeños into strips them fry them in butter before adding them to the eggs.

1 Tbsp Butter

2 Eggs

1/4 Cup Pickled Jalapeños

Recipe Tips:

– The pickled Jalapeños can be swapped out for fresh Jalapeños if desired.

– Removing the seeds from the jalapeños before cooking, will make them considerably less spicy.

– Using the proper skillet or pan is important to successful omelette making. The ideal skillet for a 1, 2 or 3-egg omelette is about 8 inches (20 cm) in diameter at the base. It should be shallow with sloping sides to make it easier to slide the omelette out of the skillet and onto a plate.

– An omelette can be made quickly and easier if the skillet is hot when the egg mixture is added. The skillet is hot enough when a drop of water rolls around instead of bursting into steam immediately.

– Preparing individual omelettes, rather than one large one, will result in lighter and fluffier omelettes that are easier to handle.

– The Omelette recipe can be multiplied for as many servings as you need.

These Low Carb Lemon Jello Dessert Bars are made with a Moist Keto Lemon Loaf style Cake Bottom, that’s topped with Whipped Cream and Sugar Free Lemon Jello. It’s the Perfect Low Carb Family Friendly Dessert!!!

How Do You Make Make Low Carb Lemon Jello Dessert Bars?

To make these delicious Keto Lemon Jello Dessert Bars:

Step 1: Start by preheating your oven to 325 F. Then in a blender, mix the eggs and cream cheese until very well blended. Add the coconut flour, powdered sweetener, lemon juice, vanilla and baking powder to the blender. Blend until fully combined.

Step 2: Then cover a 9″ x 12″ pan with tin foil and grease the bottom and sides with butter. Pour the cake batter into the pan. Use a spoon to spread the batter evenly in the pan. Then bake for 14 – 16 minutes or until a tooth pic comes out clean. Set aside to cool.

Step 3: In a large mixing bowl, whip the powdered sweetener, lemon juice and the cream cheese with the whipping cream, until stiff. Spread the whipped cream evenly over the cooled lemon loaf.

Step 4: Then in a saucepan over high heat, bring the water to a boil. Add the jello packets and stir until dissolved. Remove from the heat, then stir in the ice cubes. Stir until the ice cubes are fully dissolved.(remove any pieces of ice that are left) Pour the jello over the whipped cream, then refrigerate for 3 hours or overnight.

– The Sugar Free Jello can be replaced with 3 boxes of non sugar free Jello.

– You can use store bought low carb whipped cream if you prefer. Use 3 cups prepared whipped cream in place of the Whipping Cream and Cream Cheese.

– Use granulated sweetener or powdered sugar in place of the swerve if needed.

  • In a large mixing bowl, whip the powdered sweetener, lemon juice and the cream cheese with the whipping cream, until stiff. Spread the whipped cream evenly over the cooled lemon loaf.
  • Then in a saucepan over high heat, bring the water to a boil. Add the jello packets and stir until dissolved. Remove from the heat, then stir in the ice cubes. Stir until the ice cubes are fully dissolved.(remove any pieces of ice that are left) Slowly pour the jello over the whipped cream, then refrigerate for 3 hours or overnight.

What is Fathead Dough?

Fathead Dough is a Delicious and Easy to Make Dough made with Easy to Find Ingredients like, Mozzarella Cheese, Cream Cheese and Eggs. It’s mixed with Low Carb Almond or Coconut Flour or (my favourite way) a mix of the two. If you haven’t tried Fathead Dough yet, you’ve been missing out! It’s Amazing!!! You can use it to make a Tasty Keto Pizza Crust , Fathead Sausage Rolls or it can be used to Make These Tasty Keto Pumpkin Cinnamon Buns or  Fathead Pumpkin Pie Bars !

To make Fathead dough, you melt the shredded mozzarella and the cream cheese in a frying pan over medium heat. (This step can also be done in a microwave) Remove from the heat, then stir the melted cheeses until they’re very well combined.

Using a mixing bowl, add the almond flour, coconut flour, baking powder, xanthan gum and eggs to the cheese mixture. Mix until well combined. Then, between 2 pieces of parchment paper, press the dough into a rectangle.

How do you make the Keto Fathead Taco Rolls?

To make the Keto Fathead Taco Rolls, you start by preheating your oven to 400 F. Then brown the ground beef in a a frying pan over medium heat. In a cup mix the cumin, chilli powder, onion and garlic powder and salt and pepper with the water. Then pour over the browned ground beef. Let simmer for 5 – 10 minutes or until all the liquid is evaporated. Set aside too cool.

Then remove the top piece of parchment paper and spread the taco sauce evenly over the spread out dough. Cover the sauce with shredded cheese and the ground beef. Roll the dough into a lengthwise roll. Divide, then slice the roll into 9 slices. Carefully place the rolls (on their side) into a square, or round, buttered baking dish. Bake 20 -25 minutes.

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, that’s when you hit ketosis.

While on the Keto diet you’re supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. You’re supposed to avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

Recipe Notes:

  • To make to fathead dough with a microwave will depend on how powerful you microwave is. My rule of thumb is to melt cheese in increments of 30 seconds then stir. I did 30 seconds twice then an extra 15.
  • Want to prepare ahead of time? These taco rolls can easily be made ahead of time and frozen until you need them.
  • The Rolls can be reheated in the microwave or you could do it in the oven for a toastier outcome.
  • An easy way to cut these kinds of rolls is to use unflavored, waxed, dental floss. Slide a long piece under the roll, cross it, and pull up.
  • To get the dough into a nice straight rectangle. I folded back the top piece of parchment paper and fold the bottom piece up, then pressed it back down with the edge still folded, to make a nice flat edge.

They make a deliciously healthy appetizer, lunch or snack and can be made ahead of time and reheated.

How Do You  Make A Keto Broccoli Chicken Fritter?

To make this  Keto Chicken Fritter Recipe, you start by using a blender to blend the eggs and cream cheese until smooth. Add the coconut flour and baking powder to the blender and blend until smooth.

Cut the stems off the broccoli florets. Steam or boil them for 2 minutes or until blanched. Then in a large bowl add the shredded chicken, broccoli and cheddar cheese to the batter. Mix until well combined.

For a little extra flavour, you could add scallions, green onions or chives. You could also add feta or parmesan cheese. The crispy fritters can be served with any type of dip. I used sour cream, which was delicious but you could use a greek yogurt dip, tartar sauce or ranch instead.

  • Let the fritters fully brown before flipping. If they break apart just press them back together with a spatula.
  • f you like a thicker batter add 1 Tbsp extra of the coconut flour.
  • The butter can be switched out for coconut oil or your preferred keto cooking oil.
  • If making as an appetizer, make 12 smaller fritters instead making 6.
  • For extra crispy fritters, bake in the oven after frying at 400 F, for 5 – 7 minutes.
  • Best Served with Sour Cream and Salt and Pepper.

How Do You Make Keto Garlic Butter Croutons?

To make these Tasty Keto Garlic Butter Croutons, you start by melting the shredded mozzarella and the cream cheese in a frying pan over medium heat. Remove from the heat, then stir the melted cheeses until they’re well combined.

Using a mixing bowl, add the almond flour, coconut flour, baking powder, xanthan gum and eggs to the cheese mixture. Mix until very well combined. Then, between 2 pieces of parchment paper press the dough into a rectangle. Remove the top piece of parchment paper, then brush with 2 tbsp of the melted butter. Sprinkle with 1 tsp of garlic powder. Bake for 8 – 10 minutes, or until golden brown.

Remove from the oven, then cut into 1/4 ” squares. Over medium heat, melt the remaining butter in a large frying pan. Add the remaining garlic powder to the melted butter, then place the bread squares into  the pan. Stir until all the pieces are well coated with butter. Brown for approximately 5 minutes, stirring as it cooks.

Spread a fresh piece of parchment paper on top of a cookie sheet. Then spread the croutons evenly on the pan. Leave as much space between them as possible. Bake for 16 – 18 minutes, or until the croutons are golden brown and crunchy.

– Store on the counter uncovered for 1 – 2 days, then they can be stored in a container or zip lock bag for up to 1 week after that.

– Melting the shredded mozzarella and the cream cheese in a microwave depends on how powerful you microwave is. My rule of thumb is to melt the cheese in increments of 30 seconds and stir. I did 2 30 seconds and an extra 15.

– When making the fathead dough it feels like it’s going to be too wet at first but if you keep mixing it, it thickens. It’s important for it to be mix very well.

– You can add some extra flavour to the croutons by mixing in a little basil, rosemary, oregano or parsley with the garlic powder.

Brush with 2 tbsp of the melted butter. Then sprinkle with 1 tsp of garlic powder. Bake for 8 - 10 minutes, or until golden brown.
  • Remove from the oven, then cut into 1/4 ” squares. Over medium heat, melt the remaining butter in a large frying pan. Add the remaining garlic powder to the melted butter, then place the bread squares into the pan. Stir until all the pieces are well coated with butter.
