This Mediterranean Broccoli Salad is quick and refreshing! It features four simple key ingredients: broccoli, cucumbers, purple cabbage and parsley. The summery salad is tossed in a light lemony dressing and topped with feta cheese!

Ingredients you’ll need

To make this deliciously summery broccoli salad, you’ll need broccoli, cucumbers, purple cabbage (which has a lot less carbs than red onion), fresh garlic, lemon juice, olive oil, dried oregano and salt.

What else can I add to this?

This basic Mediterranean salad has several variations and you can change it up to your liking. Here are a few ideas:

  • Add chopped onions such as red onions, shallots, or green onions.
  • Use more fresh herbs! In addition to parsley, you can add some chopped fresh mint leaves or dill.
  • Toss in some tomato, I do sometimes add small pieces of tomatoes.
  • Olives are a great addition to this Mediterranean style salad. They also make a great garnish.
  • Add crispy crumbled bacon to the top of the salad.

How to make a Mediterranean Broccoli Salad

  1. Chop the vegetables and herbs. I like this recipe best with the raw broccoli chopped into bite size pieces, the cucumbers unpeeled and minced into small pieces, the purple cabbage chopped small, and the garlic and parsley chopped finely.
  2. Dress the salad. This salad has a really simple dressing that can be made right over the vegetables. Sprinkle the ingredients with, olive oil, dried oregano, salt, and lemon juice.
  3. Add in the cubes of feta cheese. While this does call for the feta cheese cubed, you could also use crumbled.
  4. Toss the salad to combine and enjoy.

Storing Leftovers

This Mediterranean broccoli salad is best when eaten right after it is made. That being said, it will still be delicious as leftovers. Store any leftovers in an airtight container in the refrigerator for up to three days.

Is Mediterranean broccoli salad Keto friendly?

Yes, this broccoli salad is ok to eat on a keto diet. It’s keto, gluten free and low carb and is loaded with fiber. It’s also a very affordable keto option. It’s the perfect keto side dish for bbqs and picnics.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, that’s when you hit ketosis.

While on the Keto diet you’re supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. You’re supposed to avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

This Keto Mediterranean Broccoli Salad Recipe requires minimal effort and only uses simple and easy to find ingredients like Broccoli, Purple Cabbage and Cucumber. The delicious Mediterranean salad  are also naturally high in fiber and is paleo and low carb as well as gluten free.

Since this broccoli salad is such a summery dish I like to serve it with an equally summery side dish like my Keto Chicken Kabobs or my Grilled Chicken Satay. They’re perfect for impressing guests or for spoiling someone special.

Recipe Notes:

– The mayonnaise can be switched out for greek yogurt if preferred.

– You can use red onion in place of the purple cabbage. I like to use purple cabbage instead because it has considerably less of carbs than the red onion does. I also like the crunch that the cabbage adds.

– This salad recipe can be made with store bought greek dressing instead of using the lemon juice and olive oil.

Ingredients

  • 1 lb Broccoli Florets raw
  • 1/3 Cup Purple Cabbage chopped
  • 1/3 Cup Cucumber diced
  • 1/4 Cup Mayonnaise
  • 2 Tbsp Lemon Juice

These Family Friendly, 7 Ingredient Keto Broccoli Chicken Fritters can be whipped up in Under 30 minutes. They’re naturally Gluten Free, are high in Healthy Fats and Protein and they’re a great way to sneak in some extra veggies. They make a deliciously healthy appetizer, lunch or snack and can be made ahead of time and reheated.

How Do You  Make A Keto Broccoli Chicken Fritter?

To make this  Keto Chicken Fritter Recipe, you start by using a blender to blend the eggs and cream cheese until smooth. Add the coconut flour and baking powder to the blender and blend until smooth.

Cut the stems off the broccoli florets. Steam or boil them for 2 minutes or until blanched. Then in a large bowl add the shredded chicken, broccoli and cheddar cheese to the batter. Mix until well combined.

In a frying pan, over medium/low heat, fry the fritter batter in the butter, approx. 1/4 cup at a time. Brown each side until golden brown.

For a little extra flavour, you could add scallions, green onions or chives. You could also add feta or parmesan cheese. The crispy fritters can be served with any type of dip. I used sour cream, which was delicious but you could use a greek yogurt dip, tartar sauce or ranch instead.

Recipe Tips:

  • Let the fritters fully brown before flipping. If they break apart just press them back together with a spatula.
  • f you like a thicker batter add 1 Tbsp extra of the coconut flour.
  • The butter can be switched out for coconut oil or your preferred keto cooking oil.
  • If making as an appetizer, make 12 smaller fritters instead making 6.
  • For extra crispy fritters, bake in the oven after frying at 400 F, for 5 – 7 minutes.
  • Best Served with Sour Cream and Salt and Pepper.

This Gluten Free & Keto Loaded Broccoli Cauliflower Salad makes a perfect low carb side dish for family dinners or gatherings. It’s a hearty salad that’s loaded with crispy crunchy ingredients. It will even please your non salad loving dinner guests. I mean who doesn’t love Cheese and Bacon?

How Do You a  Make Keto Broccoli and Cauliflower Salad?

To make this delicious Loaded Broccoli Cauliflower Salad, you trim and cut the cauliflower into bite sized pieces. Then boil or steam  it until it’s tender, approximately 10 minutes. Drain and it cool completely. Then trim and cut the broccoli into bite sized pieces and add to a mixing bowl along with the cooked and cooled cauliflower.

In a separate bowl, mix the mayonnaise, sour cream, vinegar and salt and pepper. Mix until well combined, then pour over the broccoli and cauliflower. Toss until the veggies are well coated. Cook and crumble the bacon.

Here’s a Fantastic Keto Crockpot Broccoli Soup Recipe that tastes just like the Cheese Sauce my Mom used to make. It’s a great way to get picky eaters to eat their veggies. It’s loaded with Broccoli and Delicious Cheddar Cheese.  For something a little more flavorful, try adding a little Havarti or Provolone along with the cheddar. Another way I add flavor to my soups is by switching the butter out for bacon grease. This Recipe can be made with Veggie Stock or Even Water in place of the Chicken Broth, if Preferred. – This Recipe can be made with Veggie Stock or Even Water in place of the Chicken Broth, if Preferred. I make my own Chicken Broth which means I need to add quite a lot of salt. If you’re using store bought broth you may not need to add any salt at all.

Ingredients

  • 5 Cups Broccoli
  • 2 Cup Chicken Broth
  • 1/2 Cup Heavy Whipping Cream
  • 1/4 Cup Butter
  • 1/4 Cup Cream Cheese
  • 3/4 Cup Mozzarella Cheese
  • 1 3/4 Cup Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  • Place the broccoli flowerets into the crockpot, then add the chicken broth and the whipping cream. Cut the butter and cream cheese into 1/2 inch squares. Place them into the crockpot, dotted throughout. Cover and cook on high for 1 1/2 hours.
  • Stir the Broccoli mixture, then cover it with the mozzarella and cheddar cheese. Stir until the cheese is incorporated. Then cook for another hour. Add salt and pepper to taste.

These 90 Calorie Gluten Free, Keto and Low Carb Broccoli Cheddar Muffins only have .8 g of Carbs and are loaded with 7.2 g of Fat and 5.5g of Protein per Muffin. The best part is they taste amazing. They’re so simple and easy to make and are totally guilt free.  They taste more like bread than a traditional egg muffin, which is nice considering that there isn’t any flours or starches added. They use a mixture of crumbled up Pork Rind or Bacon Puff and Parmesan cheese instead. This makes a surprisingly delicious bread like texture, who knew!

You’ll love how easy these savory muffins are to make. Just beat the eggs in a large mixing bowl. Then add the Crushed Pork Rinds and the Parmesan Cheese. Mix until well combined, then add in the Steamed Broccoli and 2 of the 3 Tbsp of Butter. Stir until the Broccoli is fully mixed in.

These Gluten Free, Keto & Low Carb Broccoli Cheddar Muffins are loaded with flavor and provide a nutritious hit of healthy fats and protein. They can be made with many variations. You could use mushrooms or cauliflower instead of the broccoli and you could trade the cheddar cheese for something a little more flavorful like Havarti or Monterey Jack. You could also skip the veggies and just make cheesy muffins instead.  You can have them for Breakfast, as a Quick On-The-Go Snack, or a Delicious Keto Appetizer or Side Dish.

If you haven’t heard of The ketogenic diet (often called keto), it’s a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, that’s when you hit ketosis. While on the Keto diet you’re supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. You’re supposed to avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

4 Eggs

25 g Pork Rind (1/2 Cup Crushed)

4 Tbsp Parmesan Cheese

3 Tbsp Melted Butter

3/4 Cup Steamed Broccoli

Directions

1. Preheat oven to 400 F.

2. In a large mixing bowl, beat the eggs. Add the crushed pork rinds and the Parmesan cheese. Mix until well combined, then add in the steamed broccoli and 2 of the 3 Tbsp of melted butter. Stir until the broccoli is fully mixed in.

3. Use the remaining melted butter to grease the muffin tin. Spoon the mixture evenly into the muffin tin. Sprinkle the cheddar cheese evenly onto each muffin. Then bake for 8 – 10 minutes.

Note: This recipe makes 12 small Low Carb Broccoli Cheddar Muffins. If you’d like a larger muffins divide them into 6 instead but don’t forget to double the serving size.

Tip: If you’re not a big fan of pork rinds. I suggest trying a few different brands before writing them off. I found that some brands where much stronger tasting and smelling than other brands.

Gluten Free Broccoli Cheddar Soup

This Gluten Free Broccoli Cheddar Soup recipe tastes just like the Cheese Sauce my Mom used to make. It’s a great way to get picky eaters to eat their veggies. It’s loaded with Broccoli and Delicious Cheddar Cheese.  For something a little more flavorful,  try switching the Cheddar with Havarti or Provolone. Another way I add flavor to my soups is by switching the butter out for bacon grease. I save the bacon grease in the fridge after cooking it, just for this purpose.

Gluten Free Broccoli Cheddar Soup

Ingredients

6 Tbsp Butter

1 White Onion

4 Cloves of Garlic

2 – 4 Heads of Broccoli

4 Cups Chicken Stock

1 Cup Water

1 Cup Milk

3 Tbsp Rice Flour

1 Cup Shredded Cheddar Cheese

1/4 Cup Heavy Cream

Salt and Pepper to Taste

Directions

1. Mince the onion and garlic and fry in 3 Tbsp of butter, in a large pot, over low heat for 10 minutes.

2. Wash, chop, then add the broccoli to the pot. Let fry on low for another 10 minutes.

3. Add the chicken stock and water, then let simmer for 1/2 an hour.

4. In a small pot melt 3 Tbsp of butter over medium heat. Then add the flour and stir into a paste. Let brown for 1 minute, then slowly stir in the milk. Stir constantly until it begins to boil. Then add to the main soup pot.

5. Stir well, then add the cheese and heavy cream. Add salt and pepper to taste.

6. Let simmer on low for 1/2 hour.
