Recipe Notes For Making The Best Monster Munch Mix :

  • Any flavour of Chex Cereal can be used for this recipe.
  • I used sweet and salty popcorn from a bag but air popped, microwaved popcorn or even caramel corn would also work well.
  • I bought the candy eyes and the orange candy melts from my local craft store.
  • If you don’t have orange candy melts, you can use white chocolate instead. Try adding orange food colouring to it or just leave it white.
  • If you can’t find candy eyes, you can use m&ms or reese’s pieces.
  • This snack mix should NOT be stored in the fridge or freezer. Store all extras in an air-tight container. This last for up to 2 weeks when stored at room temperature.

Sweet Potato Bites with Marshmallows

October 6, 2022 by officially gluten free Leave a Comment

These Delicious Sweet Potato Bites with Marshmallows are an easy bite-sized version of the popular sweet potato and marshmallow casserole! They’re a crowd pleasing appetizer or side dish for the Holidays! Enjoy your favourite Thanksgiving side dish in one tasty bite!

Sweet Potato Bites with Marshmallows

Ingredients in Sweet Potato Marshmallow Bites

Making this recipe is quite simple and only requires a handful of ingredients. Here’s what you’ll need:

  • Sweet Potatoes – Medium sized sweet potatoes work best.
  • Marshmallows – Use 1 Large Marshmallow or 3-4 Mini Marshmallows.
  • Pecans – Full pecan halves look the best but pecan pieces can be used as well.
  • Brown Sugar – Maple syrup or Honey can be swapped out for the brown sugar.
  • Butter – Olive oil, margarine or coconut oil can be switched for butter.
  • Sea Salt – Himalayan or regular table salt can also be used.

Sweet Potato Bites with Marshmallows

How Do You Make Sweet Potato Bites?

To make these delicious gluten free sweet potato bites:

Step 1: Preheat your oven to 400 F. Then peel the sweet potatoes.

Step 2: Slice the peeled sweet potatoes into 1/4″ thick rounds. In a mixing bowl, cover the potato rounds with the melted butter and the brown sugar. Toss until they’re completely coated.

Step 3: Place the sweet potato rounds onto a parchment paper lined baking sheet. Sprinkle with tops with the sea salt. Bake for 20 minutes, flipping them halfway.

Step 4: Turn your oven to broil. Place a marshmallow on top of each of the rounds and broil until slightly browned. Watch closely, it should only take a minute. Remove from the oven and place a pecan on top of each of the browned marshmallows.

Sweet Potato Bites with Marshmallows

Should I Peel the Sweet Potatoes?

I do peel the sweet potatoes for these sweet potato bites because I find the skin a bit to tough but if you’re ok with the skin, you can leave it on.

How Thinly Should I Slice the Sweet Potatoes?

Slice the sweet potatoes into rounds approximately 1/4-inch thick. If they’re too thin, the marshmallow and pecan will be too heavy. Try to cut the sweet potatoes as straight as possible, even a slight angle will cause the marshmallows to slide off.

How Do You Store Sweet Potato Bites?

These sweet potatoes with marshmallows and pecans on top will keep airtight in the fridge for up to 4 days. They’re surprisingly good cold.

Sweet Potato Bites with Marshmallows

Tips for Making the Best Marshmallow Sweet Potato Bites:

– Because the sweet potatoes are hot when you place the marshmallows on them, they can melt the marshmallows from the bottom first. This can make them a bit messy. To keep them looking extra pretty, you can let the potatoes cool slightly before putting the marshmallows on top or try to put the marshmallows on top as quickly as possible and get them back in the oven. Some people also found cutting the marshmallows in half helped keep them from melting too much.

– Try to cut the sweet potatoes as straight as possible, even a slight angle will cause the marshmallows to slide off.

– Use sweet potatoes close to the same size, so rounds will cook evenly.

– You can make this recipe without marshmallows or nuts. Just prep and bake the sweet potatoes as directed and then just stop there.

– If marshmallows slide off the sweet potato rounds, just push them back into the middle.

– If you don’t have any parchment paper, you’ll need to grease the pan well so that the potatoes don’t stick.

– This recipe makes 24 Sweet Potato Bites with Marshmallow and Pecans.

This Easy Gumdrop Nougat Candy is a Halloween Must! It’s a Chewy, Gooey, White Marshmallow Nougat mixed with Orange and Black Jujubes. It’s the perfect no-bake gluten free treat to make sure your Halloween is filled with fun.
Easy Halloween Gumdrop Nougat Candy

What is Halloween Gumdrop Nougat Candy?

This Halloween nougat is a homemade gluten free candy that’s made with marshmallows and white chocolate. It makes a soft and chewy no-bake candy that’s made deliciously festive by adding coloured gumdrops or jujubes.

Halloween Nougat Ingredients:

You’ll only need 3 ingredients to make this delicious gluten free Halloween Treat. The first is Marshmallows. Mini marshmallows work best but regular marshmallows will also work. Next you’ll need white chocolate. I use chocolate chips because they’re a lot easier to melt. The last thing you’ll need is orange and black jujubes or gumdrops. I picked the orange and black ones out of a larger bag of jujubes.

Easy Halloween Gumdrop Nougat Candy

Can you Double the Recipe?

Yes, you can double this Halloween gumdrop nougat recipe if you’d like to. Just use an extra pan or larger pan for it to set in. Then slice and serve like you normally would!

How to Store the Halloween Nougat

Slice up the nougat, smaller sized slices are best. Then place in an airtight container. If you stack the nougat you may want to put parchment or wax paper in between the layers so they don’t stick together.

Recipe Notes for Making the Best Marshmallow Nougat:

– If you want to speed up the setting up you can place in the freezer for a short while. But, in general, it is best to plan to make this a day in advance.

– When cutting candy nougat, having a really sharp knife is helpful. You will want to make sure it is  sharp enough to slice through the jujubes.

– Gumdrops or any jelly candies can be used in place of the jujubes.

– The marshmallows can be melted in a double boiler instead of instead of the microwave.

– This Recipe for Gluten Free Halloween Gumdrop Nougat Candy makes 24 pieces of Halloween Gumdrop Nougat.

Easy Honey Dill Carrots

September 29, 2022 by officially gluten free Leave a Comment

These Easy Honey Dill Carrots are a great side dish anytime but special enough for a holiday menu. The easy to make carrots are cooked on the stovetop from start to finish. Once they’re fork tender, they’re tossed in a delicious honey dill sauce.
Easy Honey Dill Carrots

What are Honey Dill Carrots?

Honey Dill Carrots are a simple yet delicious side dish. Carrots are steamed then tossed with naturally sweet honey and fresh dill. Great for any time of year, but especially tasty for a new take on a Thanksgiving side dish. These yummy carrots are naturally gluten free.

Ingredients for making Honey Dill Carrots

Making this recipe is quite simple and only requires a handful of ingredients.

  • Carrots – Regular carrots, baby carrots, and rainbow carrots all work great!
  • Honey
  • Dill – Fresh or dried will work. I strongly recommend going with fresh.
  • Mayonnaise

Easy Honey Dill Carrots

Do You Peel Carrots Before Cooking?

While you don’t have to ever peel carrots, I do peel mine. The whole carrots that is. There’s no need to peel baby carrots because they are already peeled. I find that peeling them takes away a bit of that “earthy” taste.

How Do You Make Honey Dill Carrots?

To Make these easy and delicious Honey Dill Carrots:

Step 1: Peel and cut the carrots, this will vary based on size/type. Small garden carrots can be left whole or halved. Larger store carrots should be halved or quartered.
Step 2: Steam the carrots until tender about 10 – 15 minutes depending on size.
Step 3: In a large bowl, mix the honey with mayonnaise and dill. Mix until completely combined.
Step 4: Once the carrots are tender, toss them in the honey dill sauce. Garnish with fresh dill.

Honey Dill Carrots

Easy Honey Dill Carrots

This Easy Honey Dill Carrot recipe is sure to get the whole family to eat their veggies! Just 4 simple ingredients: carrots (of course), honey, mayonnaise and fresh dill… I always have a bag of carrots in my fridge, they’re inexpensive, last for weeks and my kids will always eat them! Whether they’re glazed, roasted or sauteed, carrots are always a big hit.

Easy Honey Dill Carrots

Recipe Notes:

– Try and keep your carrots the same size for even cooking.

– These carrots can be boiled or roasted in the oven instead of being steamed. To make them in the oven, preheat at 400 F and place carrots in the oven and roast for 25-30 minutes until slightly tender and golden. You can toss them in the honey dill sauce before or after roasting.

– I’ve made this recipe with regular carrots, baby carrots, and rainbow carrots. They all work great!

– To reheat, simply fry with butter in a frying pan or add a bit of butter, cover with plastic wrap and zap in the microwave! You can also cover them in aluminum foil and put them in the oven until they are heated through. Refresh the flavours with a little more honey and dill and they are ready to serve!

– Store in an airtight container for 2-3 days in the refrigerator.

This Recipe for Gluten Free Easy Honey Dill Carrots makes 4 servings.

How To Make Creamy Cucumber Salad (Easy, Healthy, Delicious)

September 27, 2022 by officially gluten free Leave a Comment

This Delicious Creamy Cucumber Salad Recipe is made with only 5 Budget-Friendly Ingredients! The Simple Salad is made with thinly sliced English Cucumbers generously drenched in Sour Cream, and seasoned with a little Fresh Dill and cracked Salt and Pepper.  It’s the perfect Low Carb Side Dish or makes a Refreshing Gluten Free Snack that comes together in Minutes.

How To Make Creamy Cucumber Salad (Easy, Healthy, Delicious)

What is Cucumber Salad?

Cucumber Salad is a total classic! It’s light, refreshing, and easy to make. There are two different versions of Cucumber Salad that you might find, one having a light vinegar dressing, the other being a creamy version. This recipe is for the creamy version. There are slight variations out there, of course, but this version is our absolute favourite.

What’s in Cucumber Salad?

This salad only uses simple and budget-friendly ingredients. Here’s what you’ll need:

  • Cucumbers: I recommend English cucumbers as they’re sweeter, have a slightly thinner skin, with less seeds. You can use any type of cucumbers for this salad.
  • White Onion: I use a white onion here, but red onion or scallions would also be delicious.
  • Dill: Fresh dill really makes this salad taste so fresh and delicious.
  • Sour Cream: Makes up the base of the creamy sauce in this salad.
  • Salt & Pepper: Season to taste.

How Do You Make Creamy Cucumber Salad?

To make this delicious Low Carb Creamy Cucumber Salad:

Step 1: Use a peeler or knife to remove some of the cucumber’s skin. Then Slice the cucumber into thin slices and add to a mixing bowl.

Step 2: Mince the onion and add it along with the cucumbers. Chop the fresh dill and add it to the bowl as well. Next add the salt and pepper to the salad.

Step 3: Add the sour cream and mix until the cucumber slices are completely coated in the sour cream.

How Long Will it Last in the Fridge?

It’s easy to devour this salad in one sitting, especially if you’re serving it for a small group. But if you have leftovers, store it in an airtight container in the fridge for 2 to 3 days. Just note that the salad will become a bit watery over time.

Dressing: Creamy or Vinaigrette

I like the creaminess of the sour cream version of this salad but the vinaigrette version is also delicious. If you prefer a Cucumber Salad with a Vinegar Style Dressing, you can simply replace the dressing in this recipe with:

  • 1/4 cup white vinegar, rice or cider vinegar
  • 2 tablespoons light olive oil
  • 2 teaspoons sugar (or low carb substitute)
  • 2 tablespoons fresh dill
  • salt & pepper

To Make This Cucumber Salad Ahead

If your eating the cucumber salad immediately, it won’t matter as much but when making ahead, it can become watery over time. One way to avoid the extra water is to season cucumbers with salt in a large colander and let sweat 1 hour.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, that’s when you hit ketosis.

While on the Keto diet you’re supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. You’re supposed to avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

Recipe Notes:

– Use a mandoline slicer to cut the cucumbers in this recipe for even slicing that’s extra thin.

– Fresh dill is strongly preferred in this recipe. If you can’t find fresh dill, you can use dried dill. Use only 1 to 2 teaspoons of dried dill.

– Use thin-skinned cucumbers like English Cucumbers, for the least bitterness and best flavour. Waxy cucumbers will work but you will need to peel and possibly seed them first.

– Instead of sour cream, you can also use mayo, or plain Greek yogurt.

– This recipe makes 4 servings.

Banana Chocolate Chip Rice Pudding

September 25, 2022 by officially gluten free Leave a Comment

This Banana Chocolate Chip Rice Pudding is an easy to make old fashion style, oven baked rice pudding that’s loaded with chocolate. It’s a cozy, quick-fix gluten free snack or dessert that’s perfect for chilly afternoons! The pudding is a delightful cross between banana bread and oven baked rice pudding and the recipe’s made with only a few ingredients from your pantry.
Banana Chocolate Chip Rice Pudding

What Is Rice Pudding?

Rice puddings are found in nearly every area of the world. Recipes can greatly vary even within a single country. The dessert can be boiled or baked. Different types of pudding vary depending on preparation methods and the selected ingredients.

Banana Chocolate Chip Rice Pudding

How Do You Make Banana Chocolate Chip Rice Pudding?

To make this delicious Gluten Free Banana Chocolate Chip Rice Pudding:

Step 1: Preheat your oven to 350 F. Then in a mixing bowl, mash up the bananas with a fork.

Step 2: Add the eggs, butter, brown and white sugar and the chocolate chips to the mashed up bananas and mix until it’s completely combined.

Step 3: Pour the banana rice pudding batter into a greased square baking pan. Bake for approximately 30 minutes.

Banana Chocolate Chip Rice Pudding

Banana Chocolate Chip Rice Pudding Ingredients:

To make this Baked Banana Rice Pudding, you’ll need 7 Ingredients. As always, you can find the full printable recipe with complete instructions in the recipe card at the end of this post.

Here’s what you’ll need:  cooked rice (I use Jasmin rice),  eggs, butter, ripe bananas, white sugar, brown sugar and chocolate chips. There’s a very good chance that you’ll already have all these ingredients in your fridge and pantry.

How to Serve Banana Chocolate Chip Rice Pudding:

Since this banana rice pudding is baked it’s drier than a stove top rice pudding (which tends to be more like a tapioca pudding). I like to eat this rice pudding warm with a little bit of milk or cream in the bowl. The pudding is delicious cold as well. I do usually still add a little milk to the bowl when it’s cold.

Questions about making this Banana Chocolate Chip Rice Pudding

Can I Use Frozen Bananas?

Yes and I do this often. Thaw the frozen bananas at room temperature. Drain off any excess liquid, mash, then use as instructed in the recipe below. Try not to mash too much or else you’ll be left with 2 cups of banana-y liquid; some chunks are great.

How should rice pudding be stored? The pudding should be cooled completely and then stored in an airtight container in the fridge for up to 2 days.

Can this be made in advance? Rice pudding is really best served warm or cooled the day it’s made but it can definitely be made up to 1 day in advance. Serve chilled or warm pudding in he oven or microwave.

Can rice pudding be frozen? Yes, it can, for up to 3 months, but you might notice a change in texture. Let defrost in refrigerator overnight.

Recipe Notes for Making the Best Baked Rice Pudding :

– Margarine or Vegan butter can be used in place of the Butter.

– The best bananas to use for banana pudding are those that are over-ripe. The yellow peels should be at least half browned, and the bananas inside squishy and browning.

– I used semi sweet Dark Chocolate Chunks in this recipe. Any chocolate chips or chunks will work.

This Keto Chili Recipe features tender ground beef, hot Italian sausage, bacon, peppers, and onions that are simmered in a rich tomato base. This easy stovetop low carb no bean chili is great for dinner or lunch and the leftovers freeze well!

The Best Keto Chili Recipe

Ingredients Needed To Make This Chili Recipe:

Want to give this low carb chili recipe a shot? You won’t regret it! These are the ingredients: ground beef, sausage, bacon, celery, onion, garlic, cumin, paprika, oregano and salt.

How To Make Keto Chili on the Stove Top

Step 1: First fry the bacon until crispy and set aside for later. Brown the ground beef and sausage together next over medium-high heat in a large pot or skillet.

Step 2: Drain the fat from pot and add the diced onion and celery, minced garlic and chopped peppers to the pot. Let cook while stiring for 4 – 5 mins, then add the spices.

Step 3: Add the canned diced tomatoes and let simmer for 20 minutes, stiring a few times throughout. How To Make Keto Chili In The Instant Pot

Add the remaining ingredients plus add 2/3 cup of water, then cover and lock the lid. Make sure the steam valve is closed. Select Bean/Chili setting (30 mins). Allow the pressure to release naturally or use the quick release. Stir chili before serving!

Is Chili Keto?

Normally, no. Most chili recipes contain beans. This brings the carb count too high to be considered low carb or keto-friendly. This recipe for low carb, keto chili requires no beans or tricky ingredients that are hard to find.

What if I’m not on Keto?

If you’re not living a low carb lifestyle, you can feel free to add some heartiness to this recipe by adding some canned beans. Feel free to use either pinto beans or kidney beans. Either way, it turns out delicious. Just make sure you are using canned beans and not dry beans.

Can I add anything else to low carb chili?

Aside from the low carb toppings mentioned below, you can also add additional vegetables to keto chili if you’d like. More veggies means more fiber, which will make this chili more filling. Things like zucchini, mushrooms, and cauliflower can be sautéed with the onion and pepper.

Recipe Notes:

– This chili recipe is thick and hearty. If you prefer a chili that is not quite as thick, simply add a little water until it reaches the desired thickness.

– To thicken keto chili, you can bring it to a boil, turn down the heat, and simmer it with the lid off. As it simmers, the liquid begins to evaporate, which thickens the chili. Make sure you stir it occasionally.

– Store bought chili seasoning can be used for this recipe if preferred. Just swap out the spices for chili sesaoning. (make sure it’s gluten free) Taco seasoning also works well if needed.

– You can skip the sausage in this recipe and use just ground beef or ground turkey if desired. You can also use regular sausage if you don’t like it spicy.

– Add a little water before reheating this chili. If you like it thick just add a small amount. If you like it runny… add a bit more.

Mediterranean Broccoli Salad

June 22, 2022 by officially gluten free Leave a Comment

This Mediterranean Broccoli Salad is quick and refreshing! It features four simple key ingredients: broccoli, cucumbers, purple cabbage and parsley. The summery salad is tossed in a light lemony dressing and topped with feta cheese!

Mediterranean Broccoli Salad

Ingredients you’ll need

To make this deliciously summery broccoli salad, you’ll need broccoli, cucumbers, purple cabbage (which has a lot less carbs than red onion), fresh garlic, lemon juice, olive oil, dried oregano and salt.

What else can I add to this?

This basic Mediterranean salad has several variations and you can change it up to your liking. Here are a few ideas:

  • Add chopped onions such as red onions, shallots, or green onions.
  • Use more fresh herbs! In addition to parsley, you can add some chopped fresh mint leaves or dill.
  • Toss in some tomato, I do sometimes add small pieces of tomatoes.
  • Olives are a great addition to this Mediterranean style salad. They also make a great garnish.
  • Add crispy crumbled bacon to the top of the salad.

Mediterranean Broccoli Salad Ingredients

How to make a Mediterranean Broccoli Salad

  1. Chop the vegetables and herbs. I like this recipe best with the raw broccoli chopped into bite size pieces, the cucumbers unpeeled and minced into small pieces, the purple cabbage chopped small, and the garlic and parsley chopped finely.
  2. Dress the salad. This salad has a really simple dressing that can be made right over the vegetables. Sprinkle the ingredients with, olive oil, dried oregano, salt, and lemon juice.
  3. Add in the cubes of feta cheese. While this does call for the feta cheese cubed, you could also use crumbled.
  4. Toss the salad to combine and enjoy.
Mediterranean Broccoli Salad

Storing Leftovers

This Mediterranean broccoli salad is best when eaten right after it is made. That being said, it will still be delicious as leftovers. Store any leftovers in an airtight container in the refrigerator for up to three days.

Is Mediterranean broccoli salad Keto friendly?

Yes, this broccoli salad is ok to eat on a keto diet. It’s keto, gluten free and low carb and is loaded with fiber. It’s also a very affordable keto option. It’s the perfect keto side dish for bbqs and picnics.

Mediterranean Broccoli Salad

Keto Mediterranean Broccoli Salad Recipe

This Keto Mediterranean Broccoli Salad Recipe requires minimal effort and only uses simple and easy to find ingredients like Broccoli, Purple Cabbage and Cucumber. The delicious Mediterranean salad  are also naturally high in fiber and is paleo and low carb as well as gluten free.

Since this broccoli salad is such a summery dish I like to serve it with an equally summery side dish like my Keto Chicken Kabobs or my Grilled Chicken Satay. They’re perfect for impressing guests or for spoiling someone special.

Mediterranean Broccoli Salad

Recipe Notes:

– The mayonnaise can be switched out for greek yogurt if preferred.

– You can use red onion in place of the purple cabbage. I like to use purple cabbage instead because it has considerably less of carbs than the red onion does. I also like the crunch that the cabbage adds.

– This salad recipe can be made with store bought greek dressing instead of using the lemon juice and olive oil.

These Grilled Chicken Kabobs are made with a flavourful homemade marinade and colourful vegetables that are grilled to perfection. The recipe is great as an appetizer when entertaining or a light dinner the whole family would enjoy.

Grilled Chicken Kabobs with Vegetables

What are Grilled Chicken Kabobs?

Chicken kabobs are cubes of marinated chicken and colourful vegetables, skewered and grilled to perfection. The bold kabob marinade makes all the difference in giving you tender grilled kabobs that are packed with flavour!

What Ingredients do you need to make Grilled Chicken Kabobs?

For this recipe you’ll need boneless, skinless chicken breasts and vegetables. I like to use bell peppers, zucchini and onion. You’ll also need to make a marinade for the chicken. We made a sugar free and low carb marinade with garlic and onion powder, cumin, paprika, salt, lime juice and olive oil. You will also need metal or wooden skewers.

Marinading The Chicken Kebabs

It’s important when you marinate chicken that you keep a few things in mind.

  • Chicken should marinate for 1/2 hour to 24 hours. For this recipe I’m recommending 1/2 hour, but you could definitely start the marinade the night before.
  • Do not marinate chicken for more than 24 hours. It will make the chicken gummy and unappetizing.

Finally, though we are only marinating the chicken, it will impact the flavour of the vegetables. The vegetables will pick up the flavour of the marinade on the grill and be delicious alongside the chicken.

Substitutions for Chicken Kebabs

– Pieces of steak or pork can be substituted for chicken, but cook times will vary.

– Use any bell peppers in this recipe. Coloured peppers like red, orange and yellow are sweeter than green.

– Use white, sweet onions or purple onions.

– Add fresh mushrooms, cherry tomatoes or even fresh pineapple to these skewers.

Grilled Chicken Kabobs

Grilled Chicken Kabobs with Vegetables

We love grilling shish kabobs for dinner because they are full of flavour, easy to make and fun to eat. Grilled kabobs have an advantage over other grilled chicken recipes: the bite-size pieces of chicken soak up extra flavour from the marinade so that every bite is intensely flavourful and satisfying. The delicious chicken kabobs are gluten, sugar and dairy free, low carb and keto, which makes them an awesome dish for feeding groups of people with diverse dietary needs.

Since these chicken skewers are such a summery dish I like to serve them with an equally summery side dish like my Loaded Broccoli and Cauliflower Salad or my Smashed Brussels Sprouts.  They’re perfect for impressing guests or for spoiling someone special.

Recipe Notes:

– If using wooden skewers, you’ll need to soak the skewers in water before using.

– These Chicken Shish Kabobs cook on the grill for around 14 to 18 minutes. It is important to remember that if you cut your chicken bigger it will need to cook longer.

– Cut the chicken and vegetables into even sizes so they cook evenly.

– To cook in the oven: Line a rimmed baking sheet with parchment paper. Place kabobs on the baking sheet and bake at 425° F for 24-30 minutes, turning them occasionally, until chicken is cooked to 165° F. I use kitchen tongs to turn the kabobs, as the skewers are hot.
