Recipe Notes:

  • If cooking the meatballs in the slow cooker for more than 4 hours, you’ll need to add a bit of water.
  • The sweet and sour meatballs can be served without cooking them in a slow cooker or crock pot. Just pour the prepared sauce over the cooked meatballs, if preferred.
  • If you like breadcrumbs in your meatballs, try using crushed up pork rinds instead. You won’t need to add as much salt though because they’re usually salted.
  • If you don’t have tin foil, just use an unlined baking pan.
  • The keto meatballs can ba made with just ground beef or pork. They will work fine without mixing but I find the texture and taste to be better if you mix them.
  • The recipe makes 9 servings of 6 meatballs each. If feeding a larger crowd you’ll need to double or triple the recipe.

Keto Fathead Taco Rolls

What is Fathead Dough?

Fathead Dough is a Delicious and Easy to Make Dough made with Easy to Find Ingredients like, Mozzarella Cheese, Cream Cheese and Eggs. You can use it to make a Tasty Keto Pizza Crust , Fathead Sausage Rolls or it can be used to Make These Tasty Keto Pumpkin Cinnamon Buns or  Fathead Pumpkin Pie Bars !

Keto Fathead Taco Rolls

To make Fathead dough, you melt the shredded mozzarella and the cream cheese in a frying pan over medium heat. (This step can also be done in a microwave) Remove from the heat, then stir the melted cheeses until they’re very well combined.

Using a mixing bowl, add the almond flour, coconut flour, baking powder, xanthan gum and eggs to the cheese mixture. Mix until well combined. Then, between 2 pieces of parchment paper, press the dough into a rectangle.

Recipe Notes:

  • To make to fathead dough with a microwave will depend on how powerful you microwave is. My rule of thumb is to melt cheese in increments of 30 seconds then stir. I did 30 seconds twice then an extra 15.
  • Want to prepare ahead of time? These taco rolls can easily be made ahead of time and frozen until you need them.
  • The Rolls can be reheated in the microwave or you could do it in the oven for a toastier outcome.
  • An easy way to cut these kinds of rolls is to use unflavored, waxed, dental floss. Slide a long piece under the roll, cross it, and pull up.
  • To get the dough into a nice straight rectangle. I folded back the top piece of parchment paper and fold the bottom piece up, then pressed it back down with the edge still folded, to make a nice flat edge.
  • Some Easy Keto Toppings for a Toppings Bar for these Ground Beef Taco Rolls are: Shredded Cheese, Sour Cream, Taco Sauce or Salsa, Lettuce, Tomato, Pickled Jalapeños and Guacamole.

Philly Cheese Beef Skillet

March 31, 2019 by officially gluten free Leave a Comment

This Keto Philly Cheesesteak Style Beef Skillet is a Delicious mix between Sloppy Joe’s and Philly Cheesesteak. It’s an Easy and Inexpensive Family Friendly Meal that can be thrown together in less than 30 minutes. The recipe uses Ground beef instead of more expensive Steak which is typically used in Philly Cheesesteak recipes. It can be served on it’s own or over a bed of Zucchini Noodles or Low Carb Bread.

Philly Cheese Beef Skillet

How Do You Make a Keto Philly Cheesesteak Style Beef Skillet?

To make this Tasty Philly Cheese Style Beef Skillet you start by seasoning the beef with the salt and pepper, then brown it in the skillet over medium heat.

Philly Cheese Beef Skillet

Once the beef is fully cooked, remove from the pan and set aside until later. Slice up the onion and green pepper. Add 1 tbsp of the butter to the skillet with the beef drippings. Fry the onion and peppers until browned. (about 4 minutes) Then set aside with the cooked ground beef.

Philly Cheese Beef Skillet

Then preheat your oven, set on broil. Add the remaining butter to the skillet, along with the minced garlic and basil. Let brown for 1-2 minutes, then add the tomato sauce, heavy cream and garlic powder. Stir until combined, then let simmer for 1 – 2 minutes.

Philly Cheese Beef Skillet

Add the cooked ground beef back to the skillet and stir until the beef is well coated. Add the peppers and onions to the pan and mix until the meat and veggies are combined. Cover the cheesesteak and veg with the provolone slices, then place in the oven on broil for 3 – 4 minutes or until the cheese is the desired meltliness.

Philly Cheese Beef Skillet

This recipe for Philly Cheese Beef Skillet is kid approved, making it perfect for those busy work/school nights. It’s a nice chance up from spaghetti, which we seem to have weekly. I used ground beef to make this dish because I typically have ground beef on hand. If you have or would prefer to use steak, by all means do. You can also use whichever coloured peppers you prefer or even add in a few mushrooms. I like the flavour the provolone cheese adds, but shredded or sliced mozzarella would also do the trick.

Philly Cheese Beef Skillet

Recipe Notes:

  • You can use shredded or sliced Mozzarella Cheese in place of the Provolone if desired.
  • If you don’t have an oven proof skillet, use a square baking dish instead.
  • The ground beef can be switched out for Sliced Beef Roast or Sliced Cooked Steak if preferred.
  • The recipe can be made “one pot style” instead of removing the beef from the pan, just add all the ingredients in along with it. Then let simmer until onions and pepper are cooked through. ( I cook the beef and onions separately because I like how the onion and peppers caramelize on their own)
  • This recipe for Philly Cheese Beef Skillet Serves 4

If you haven’t heard of The ketogenic diet (often called keto), it’s a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When your body switches to burning fat for its primary fuel source, that’s when you hit ketosis.

While on the Keto diet you’re supposed to get at least 70 percent of your calories from fat, 15 to 25 percent from protein, and 10 percent from carbohydrates. You’re supposed to avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

Meatballs with Keto Peanut Satay Sauce

Meatballs with Keto Peanut Satay Sauce

This Incredibly Simple Recipe for Meatballs with Keto Peanut Satay Sauce is really easy to make. The sauce can be whipped up in a few minutes. It’s so tasty, you’ll want to add it to your regular dinner rotation. I’ve used the tasty sauce for a number of dishes, including chicken smothered in peanut sauce and as a dipping sauce for my favourite gluten free spring rolls. The sauce is slightly spicy but is mild enough for my 10 year old to eat.

If you love Low Carb Appetizers, then you’ll want to try out these Bacon Crab Rangoon Fat Bombs.  They’re a bite-sized Fat Bomb that’s loaded with flavor and provides a nutritious hit of healthy fats.

Meatballs with Keto Peanut Satay Sauce

“These Meatballs with Keto Peanut Satay Sauce are Gluten Free & Paleo. They’re smothered in a Mildly Spicy Thai Peanut Curry Sauce. The delicious meatballs make a Great Keto Appetizer that’s perfect for Game Day or a Tasty Dinner, served with a side of Veggies and Cauliflower Rice.”

Ingredients

For the Keto Peanut Satay Sauce:

1 1/2 Tbsp Red Curry Paste

1 Can Coconut Milk

5 Tbsp Natural Peanut Butter

3 Tbsp White Vinegar

1 Tbsp Granulated Sweetener (I used this one)

For the Keto Meatballs:

1 1/2 lbs Ground Beef (750 g)

1/2 Cup Pork Rinds

1 Egg

1 Tsp Garlic Powder

1 Tsp Onion Powder

Salt and Pepper

Directions

For the Keto Peanut Sauce:

1. Blend the curry paste in a small pot with the liquid from the coconut milk. Once it’s fully combined, add the cream from the can of coconut milk. Bring to a boil over medium heat, then add the peanut butter, sweetener and vinegar to the pot. Stir constantly until it begins to boil again.

2. Let simmer on low for 5 minutes. Remove from heat and let cool.

For the meatballs:

1. Preheat oven to 400 F. In a large bowl mix the ground beef with the crushed pork rinds, the egg, garlic powder, onion powder and salt and pepper. ( If using salted pork rinds you shouldn’t need to add much more salt)

2. Line a lasagna pan or cookie sheet with tin foil. Then roll out, small one inch meatballs. Place the meatballs in the pan, and bake for 10 minutes. Pour off any grease then turn your oven to broil. Bake for another 8 – 10 minutes, turning a few times if needed.

3. Transfer the cooked meatballs to a smaller baking dish, then cover them with 3/4 of the keto peanut  sauce. Bake for another 5 – 10 minutes. Serve on their own with the remaining sauce as a dip, or serve as a side with cauliflower rice and steamed veggies.

Recipe Notes:

– If serving as an appetizer, try placing the meatballs on a larger pan with some space between them. This will help make them a little prettier.

– Placing your coconut milk in the fridge before using will help separate the cream from the liquid. Also opening the can upside down will make separating it easier.

– Adding a few crushed peanuts to the sauce with add a little texture.

–  If using salted pork rinds you won’t need to add much salt.

– For a non low carb peanut satay sauce, replace the sweetener with 3 Tbsp of brown sugar.

– For a bit less spicy sauce, add 1 Tbsp of the curry paste instead of 1 1/2.

– If you don’t have tin foil, just use an unlined baking pan.

Keto Meat Pies

These Keto Meat Pies are an Easy Keto Dinner, that’s so satisfying. They’re loaded with flavour and are  made with an easy to make with a mozzarella cheese based crust. Meat pies typically have a top crust but i opted to skip it to keep the calories down. If you prefer to have crust on the top, just double the dough recipe to make your tops. I added cabbage to my beef, which i found tasted just like grilled onion. It looks like it’s to much cabbage at first but it cooks down a surprising amount throughout cooking.

Have You Tried Low Carb Fathead Dough Yet? If You Haven’t… You’ve Been Missing Out! It’s Amazing!!!  It’s Made With a Mozzarella Cheese Based Dough that’s So Versatile. It Makes an Awesome Keto Pizza Crust, Fathead Nacho Chips or can be used to Make Tasty Keto Pumpkin Cinnamon Rolls.

WHAT IS THE KETOGENIC DIET?

The ketogenic diet (often called keto) is a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When in ketosis, your body switches to burning fat for its primary fuel source.

On Keto, you’re supposed to get at least 70 percent of your calories from Fat, 15 to 25 percent from Protein, and 10 percent from Carbohydrates. You should avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

Keto Beef Taquitos

This Keto Beef Taquito Recipe requires minimal effort and only uses simple and easy to find ingredients like ground beef, onion, shredded cheese and cumin. The recipe is best served with a side of sour cream and garnished with chopped fresh Cilantro or Parsley. It’s a perfect make ahead recipe that can quickly be reheated by preheating your oven to 350 F. Then baking for 6-8 minutes. They can be made with many variations. Instead of Beef you could use Chicken with Franks Red or Keto Bbq Sauce or you could add a little cream cheese and or jalapeños.

Another one of our favourites, is this tasty Keto Jalapeño Popper Taquitos. They’re perfect for impressing dinner guests or for spoiling someone special. Let us know how they turned out for you in the comments below!

Recipe Notes:

  • Be Sure Not Use Wax Paper! It must be Parchment Paper.
  • To reheat, Preheat oven to 350 F. Bake for 6-8 minutes.
  • Cheese slices also work great for this recipe.
  • I let cheese shell cool for a minute then flipped it over before putting the filling onto it. This step isn’t necessary but I found that it made the taquitos look a little prettier.
  • You can use a store bought taco spice instead of adding all the spices one by one but make sure to check for carbs because some add corn starch to their packets.
  • This recipe makes 6 Keto Taco Flavored Beef Taquitos
