Jalapeno Bacon Bombs

These Creamy Keto & Gluten Free Jalapeno Bacon Bombs are Perfect for Game Day!!!! The Tasty Little Morsels are Really Easy to Make and are Packing Just the Right Amount of Heat. They Can Be Made Ahead of Time, Which Makes Preparing for Game Day that Much Easier. I found these Jalapeno Bacon Bombs are nice change from Bacon Wrapped Jalapeños but Equally as Tasty!

How to Make Jalapeno Bacon Bombs

In a small bowl mix the softened cream cheese with the diced pickled jalapeños and the shredded havarti cheese. Mix until well combined then set aside.

Cut the bacon slices in half then lay them in a t shape using a mini muffin pan or baking pan.  Place 1 Tbsp of the jalapeno cream cheese mixture onto the centre of the t’s.

Tightly wrap the edges of the bacon over the cream cheese, then use a tooth pick to secure it. If using a mini muffin pan – Bake for 5 – 7 minutes – then transfer to a baking pan and bake for another 20 -25 minutes or until the bacon is crispy. ( The mini muffin pan is help keep their shape but this step can be skipped)

Drain off the fat a few times throughout baking. If you’re using a baking pan bake for 25 -30 minutes, turning them a few times throughout, also pour off the grease when turning.

WHAT IS THE KETOGENIC DIET?

If you haven’t heard of The ketogenic diet (often called keto), it’s a very low-carb, high-fat diet that shares similarities to paleo, Whole30, and Atkins. It involves drastically reducing carbohydrate intake, and replacing it with fat. When in ketosis, your body switches to burning fat for its primary fuel source.

On Keto, you’re supposed to get at least 70 percent of your calories from Fat, 15 to 25 percent from Protein, and 10 percent from Carbohydrates. You should avoid all grains, legumes, root vegetables, fruit, (except berries) and sugar.

To make these Jalapeno Bacon Bombs I used Pickled Jalapenos. I used them because I prefer the taste and texture. You could use fresh Jalapeños instead. I would roast them in the oven a little before adding them to the cream cheese. Also you could use Mozzarella Cheese instead of Havarti if you’d like to. I used a mini muffin pan to help them keep they’re shape. I only used the muffin pan for the first 5 minutes or so of baking so that the would hold they’re shape a bit better. I then moved the bacon bombs to a baking pan to finish baking. This just made it a bit easier to pour off the grease. You could easily skip this step and bake them in a baking pan from the beginning, if you prefer too.

Ingredients 

12 Slices Bacon

3/4 Cup Cream Cheese

1/4 Cup Pickled Jalapeños (diced)

Keto Pumpkin Cinnamon Rolls

How to Make Keto Pumpkin Cinnamon Rolls

All you have to do is melt the shredded mozzarella and the cream cheese in a small frying pan over medium heat. Then, remove from the heat and stir the cheeses until well combined.

In a mixing bowl, add the almond flour, coconut flour, baking powder, xanthan gum and eggs to the cheese mixture. Mix until well combined. Between 2 pieces of parchment paper, press the dough into a rectangle.

Then, in a small bowl mix the pumpkin with the whipping cream, sweetener and the cinnamon.  Mix until well combined. Remove the top piece of parchment paper, then spread the pumpkin mixture evenly over the spread out dough.

Roll the dough into a lengthwise roll. Divide, then slice the roll into 9 slices. Carefully place the rolls (on their side) into a square, or round, buttered baking dish. Bake 20 -25 minutes.

If You Love Pumpkin Pie and Cinnamon Rolls, Then You’ll Love these delicious Keto Pumpkin Cinnamon Rolls. They’re so Good You’d Never Even Guess they were Keto!  The dough is really easy to make and can be thrown together in a few minutes. They’re my families new favourite fall snack. I’m not a fan of nutmeg or cloves, so i skip it but if you like them you can add them in with the cinnamon. About 1/2 a Tsp of each should be more than enough. You can also use just coconut flour or just almond flour instead of combining them.

For the Pumpkin Filling: 

1 1/2 Cup Canned Pumpkin

2 Tbsp Heavy Whipping Cream

2 Tbsp Sweetener  (I used this one) 

1 Tsp Cinnamon

For The Fathead Dough:

2 Cups Mozzarella Cheese, Shredded

3 Tbsp Cream Cheese

2 Eggs

1/2 Cup Almond Flour

1/4 Cup Coconut Flour

1 Tsp Baking Powder

1/2 Tsp Xanthan Gum (optional)

1 Tsp Butter (to grease the pan)

For the Frosting: (Optional) 

4 Tbsp Cream Cheese

How Do You Make Keto Fried Pickles?

You’ll love how easy his recipe is to make. First you slice the pickles in half, lengthwise, then slice the halves in half as well.  Then in a small bowl, beat the egg. In another bowl mix the ground pork rinds with the coconut flour and the parmesan cheese.

Grease a baking pan with butter. Dip the pickle spears in the egg, then dip them in the crumbs. These Keto Oven Fried Pickles can be made with any type of pickle. I chose to use dill spears but you could use Rounds, Slices or Halves. I also chose to bake mine but you could fry them in oil or use an air fryer if you prefer to. I like to use crushed pork rinds instead of almond flour because it has less calories and is a lot cheaper. I also really like the way it tastes.

If you don’t eat pork or just don’t like pork rinds, you can easily substitute it for almond or coconut flour. I served these Delicious Fried Pickles with a Creamy Homemade Tartar Sauce. I used 1 pickle diced up and mixed with 1 Tbsp of Sour Cream and 1 Tbsp Mayonnaise. Then I add a Tsp of Lemon Juice and a Dash of Salt.

Keto Snickerdoodle Woopie Pies

Ingredients

For the Keto Snickerdoodles:

3 Eggs, separated

3 Tbsp Cream Cheese

1/4 Tsp Cream of Tartar

3 Tbsp Granulated Sweetener, divided (I used this one) 

1/2 Tsp Cinnamon

For the Filling:  

1/2 Cup Cream Cheese

1/4 Cup Heavy Whipping Cream

1 Tbsp Sweetener

1 Tsp Vanilla

1/2 Tsp Cinnamon

Directions 

For the Snickerdoodles: 

1. Preheat oven to 300 F. Carefully separate the the eggs. In one bowl, mix together the egg yolks, the cream cheese and 1 tbsp of the sweetener, until smooth.

2. In another bowl, add the cream of tartar to the egg whites, then beat on high speed until stiff peaks form. this will take several minutes and will look very thick and not frothy. To make this tasty Gluten Free Blueberry Loaf,  I used Fresh Blueberries but you could also use Frozen. You could also substitute the Blueberries for Raspberries, Strawberries, Cherries or Apples and Cinnamon.

One of the reasons that I use rice flour in most of my recipes is because its so inexpensive. You can find it for $1.00 a bag at Asian Supermarkets or in the import sections at Larger Grocery Stores. It’s also very versatile and doesn’t have a weird after taste like a lot of other gluten free flours do.

Note: Rice Flour can vary from brand to brand. I’ve found that measurements can be different depending on the brand you’re using. The Thai brand which has red writing on the bag is ground finer and can take more than the Indian rice flour that I get at Superstore. Both brands work wonderfully but there is a slight difference in the measurements, as I mentioned. Because of this, I like to add the flour a little a time until the consistency is right.

2 Tsp Baking Powder

My family loved having these Rich, Chocolatey Gluten Free Two Bite Cherry Brownies as a treat to celebrate Valentine’s Day. They’re incredibly soft and are reminiscent of Black Forrest Cake which happens to be my all time favourite Cake. They’re the perfect for treat for Brightening Someones Day.

How to Make Gluten Free Brownies

To make the easy Gluten Free Brownies, you start by preheating your oven to 350 F. Then, in a small pot over medium heat, melt the butter and 1/2 cup of the chocolate chips. Stir until well blended.

In a separate large bowl mix the eggs and sugar together. Then stir it into the butter and chocolate mixture. Mix until well combined. Then add the rice flour and cocoa powder.

Spoon into a greased mini muffin tin. Press 1 cherry into each of the mini brownies. Bake for approximately 20 minutes or until firm.

Next, melt the remaining chocolate and drizzle over the Cherry Brownies.

These Two Bite Cherry Brownies can also be made as a Flourless Brownie. This makes them more of fudge like texture. I added a Half of a Cup of Rice Flour to make them a little bit Firmer and Cake like. If you like you could switch the Rice Flour for Potato, Corn or Tapioca Starch.

The best part about this recipe is it’s so Quick and Easy to Make. All you need is a Mini Muffin Pan, Brownie Batter and 24 Cherries. I used frozen Cherries because they’re out of season at the moment and I already had a bag of them in the freezer. I found the frozen ones worked well and are also much cheaper than fresh ones. The best part is they’re already pitted. If using fresh Cherries instead, you have to pit them first which can be a bit messier and more time consuming.

The best part is they’re so quick and Easy to Make. All you’ll need is a Unicorn Cookie Cutter and a Pack of Corn Tortillas. I got my Unicorn Shaped Cookie Cutter at Michaels. You can also get them from Amazon.

For the Cinnamon Sugar Unicorn Chips:

1 package of Corn Tortillas

1/4 Cup White Sugar

1 Tbsp Cinnamon

1/4 Cup Melted Butter

For the Rainbow Unicorn Cheesecake Dip:

1 Package (8 oz.) Cream Cheese

1 Can Sweetened Condensed Milk

1/3 Cup Lemon Juice

1 Cup Whipped Cream

Food Colouring

Directions

1. In a large bowl whip the cream cheese, until it’s light and fluffy. Then whip in the sweetened condensed milk and lemon juice.

2. Fold the whipped cream into the cream cheese mixture, until well combined. Place equal amounts into 4 separate bowls. Add desired colours. Mix until you get the colours you want.

3. Place a large ziplock bag into a bowl. Then put the all coloured cheesecake into the bag. Swirl the colours around just slightly. Seal the top of the bag then place it into the fridge until ready to serve.

4. Pre heat oven to 375 F.

5. In a small bowl mix the sugar and cinnamon. Use a cookie cutter to cut out unicorn shapes from the corn tortillas. Brush both sides generously with the melted butter. Then dip both side of the shapes into the cinnamon sugar.

6. Place the sugared shapes onto a ungreased baking pan. Bake for 8 – 10 minutes, flipping half way.

Note: Watch the Unicorn Chips Closely. The sugar can burn quickly if left unattended.

  2. Fold the whipped cream into the cream cheese mixture, until well combined. Place equal amounts into 4 separate bowls. Add desired colours. Mix until you get the colours you want.
  3. Place a large ziplock bag into a bowl. Then put the all coloured cheesecake into the bag. Swirl the colours around just slightly. Seal the top of the bag then place it into the fridge until ready to serve.
  4. Pre heat oven to 375 F.
  5. In a small bowl mix the sugar and cinnamon. Use a cookie cutter to cut out unicorn shapes from the corn tortillas. Brush both sides generously with the melted butter. Then dip both side of the shapes into the cinnamon sugar.
  6. Place the sugared shapes onto a ungreased baking pan. Bake for 8 - 10 minutes, flipping half way.

These Gluten Free Jalapeno Cheddar Biscuits are so Soft and Flaky. They’re also incredibly Cheesy and are packing just the right amount of Heat from the Jalapenos.  I used pickled Jalapenos, which I thought worked perfectly. If you Prefer, you could use fresh Jalapeno Slices instead. You can also make your own Buttermilk by adding a Tbsp of Lemon Juice to regular Milk.

The best thing about these Gluten Free Jalapeno Cheddar Biscuits is that they’re so quick and easy to make. They’re much easier to make than buns and they taste just as good. We had them with Shrimp Fettuccini Alfredo for Dinner and then again with Omelettes and Hashbrowns fo breakfast in the morning. They went so well with both meals, that I couldn’t tell you which one I preferred. One of the reasons that I use rice flour in most of my recipes is because its so inexpensive. You can find it for $1.00 a bag at Asian Supermarkets or in the import sections at Larger Grocery Stores. It’s also very versatile and doesn’t have a weird after taste like a lot of other gluten free flours do.

Note: Rice Flour can vary from brand to brand. I’ve found that measurements can be different depending on the brand you’re using. The Thai brand which has red writing on the bag is ground finer and can take more than the Indian rice flour that I get at Superstore. Both brands work wonderfully but there is a slight difference in the measurements, as I mentioned. Because of this, I like to add the flour a little a time until the consistency is right.

Gluten Free Jalapeno Cheddar Biscuits

Ingredients

1 1/4 Cups Rice Flour

1/2 Cup Potato Starch (corn or tapioca)

3 Tsp Baking Powder

5 Tbsp Butter

3/4 Cup Buttermilk

1 Cup Shredded Cheddar Cheese

1/2 Cup Sliced Pickled Jalapenos

Directions 

1. Pre heat oven to 450 F

2. In a large bowl, cut the cold butter into flour, starch and baking powder. Mix until well combined.

3. Add the buttermilk, 1/2 a cup of the cheddar cheese and 1/4 cup of the chopped jalapeno slices. Mix until a dough forms.

4. Using a rolling pin, roll out dough on a floured surface. Using a round cookie cutter or a cup, cut out biscuits.

5. Place onto an ungreased or parchment paper lined baking sheet. Sprinkle the remaining cheese and jalapeños on top of each of the biscuits.

6. Bake for 8 – 10 minutes.

This recipe makes 10 Gluten Free Jalapeno Cheddar Biscuits.

The delicious tarts are made with a flaky gluten free butter pie crust that’s filled with a rich buttery caramel filling and topped with salty pecan pieces. The yummy Butter tart is Canadian classic dessert made of brown sugar, butter and eggs.

How to make Gluten Free Butter Tarts with Flaky Butter Crust

Pie crust can be a little challenging to make but if you take your time and keep mixing it, a lovely dough ball will form. When I’m rolling the dough out, I press the sides back in as I go. I will do a few rolls with the rolling pin, then press it all tightly back together again. Then a few more rolls, and so on.

A trick That I found very helpful, is to use a piece of parchment paper or a thin plastic mat to roll it out on. It makes it much easier to get the crust really thin and helps a lot if  you need to flip the crust into a  pie pan. One more important factor in making great Pie Crust is keeping the dough cold. Placing the dough in the fridge for half hour before rolling it out and again for 10 minutes before the filling goes into it, helps keep the crust nice and flaky but not too dry.

A few months ago I made a delicious Gluten Free Butter Pie Crust that actually holds up and I have been dying to make these Gluten Free Butter Tarts with it. It’s been years since I’ve had one and these Gluten Free Butter Tarts didn’t disappoint. The Light and Flaky Butter Crust is a perfect match for the Sweet Buttery, Butter Tart Filling.   • Some People like raisins in their Gluten Free Butter Tarts. I didn’t add any to this recipe but if you’re fond of them, you could add them in. Just soak 1 cup of raisins in hot water for 10 – 15 minutes. Drain them, then pat them dry. Add them into the brown sugar butter mixture before adding to the tarts.

Ingredients

  • For the Tarts
  • 2 Cups Rice Flour
  • 1 Cup Potato Starch Tapioca or Corn Starch
  • 3/4 Cup Butter
  • 1 Tbsp Sugar
  • 2 Egg Yolks
  • 1/4 Cup Milk
  • 1 Tsp White Vinegar
  • For the Filling
  • 1/2 Cup Butter
  • 1 1/2 Cups Brown Sugar
  • 2 Eggs
  • 2 Tsp Vanilla
  • 2 Tbsp Heavy Cream
  • 1/2 Cup Pecans

Instructions

  • For the Crust
  • - Cut the cold butter into the flour, starch and sugar, mix until well combined. (I use my hands and squish the butter and flour together until a crumbly mixture forms)
  • Add the egg yolk, milk and vinegar. Then mix with your hands pressing it into the bottom of the bowl and kneading it like bread dough. The dough seems a little to dry at first but keep mixing it and a firm dough will form after a few minutes.
  • Place the dough in a disc shape, wrapped in plastic wrap in the fridge for 1/2 hour.
  • On a lightly rice floured piece of parchment paper, roll out the dough. If the dough breaks or cracks just press it back together with your fingers.
  • Use a large round cookie cutter or a large cup or bowl to cut out circles in the dough. Place the dough circles into a muffin tin.  Place in the fridge for 10 minutes.
  • Preheat oven to 400 F.
  • For the Filling
  • - In a small pot over low heat, melt the butter. Add the sugar, then stir until well combined.
  • Remove from heat, then add the eggs, cream and vanilla. Mix well, then fill the tarts 2/3 full. Place a few pecans on top of each of the tarts.
  • Bake for 15 - 20 minutes.
  • Let the Gluten Free Butter Tarts cool completely before eating.
